Our story stretches back to the 1920s with Willie “Big Daddy” Williams, a skilled swine herder and pit master who turned necessity into tradition. Today, we honor his legacy with every cut of pork, chicken, beef, and fixin’ we prepare.

Our heritage-bred swine are pasture-raised and humanely cared for on our family farm in southwest Georgia. We also source our yardbird and pasture-raised beef from folks who share our values and methods. Here at August Swine BBQ, it ain’t just about the pork. Line / Prep Cook – Pit Partner

Our Line / Prep Cook – Pit Partner is a versatile member of the kitchen crew responsible for helping prepare, cook, and serve our menu to August Swine standards. This role works across kitchen stations and should be able to safely operate the pit/smoker and other kitchen equipment after completing required training.

What You’ll Do

Prepare, season, cook, portion, and serve meats, sides, and other menu items according to August Swine recipes, portions, quality standards, and work instructions.
Safely operate the pit/smoker and other kitchen equipment and monitor cooking times and temperatures to ensure consistent food quality and food safety.
Complete daily food prep, including preparing ingredients, sides, proteins, and other menu items needed for service.
Monitor food quality, freshness, temperatures, holding times, and product levels throughout the shift.
Properly label, store, handle, and rotate food using established food-safety and FIFO procedures.
Stock and maintain kitchen and prep stations so the restaurant is ready for service and remains prepared throughout the shift.
Maintain clean, sanitized, safe, and organized food-preparation areas, equipment, utensils, and work surfaces.
Follow opening, shift-change, closing, cleaning, and sanitation procedures.
Work across kitchen stations and pitch in wherever needed during rush periods, staffing gaps, and changing business needs.
Communicate and work closely with fellow crew members and management to deliver accurate orders, efficient service, and a great guest experience.

What We’re Looking For

Prior restaurant, line cook, prep cook, BBQ, or commercial kitchen experience preferred.
Prior experience safely operating commercial kitchen equipment — such as smokers/pits, ovens, grills, slicers, choppers, food processors, and other food-preparation equipment — preferred.
Experience working with a commercial smoker or pit is a plus; training on August Swine equipment, recipes, pit procedures, and work instructions will be provided.
Current food-safety certification, such as ServSafe Manager, ServSafe Food Handler, or another recognized food-safety certification, is preferred. Required certifications may be provided or sponsored by August Swine BBQ.
Ability to follow recipes, written work instructions, food-safety procedures, and established portion and quality standards.
Basic reading, math, measurement, and communication skills needed to follow recipes, prep quantities, temperatures, labels, and kitchen instructions.
Dependable, hardworking, team-oriented, and comfortable working in a fast-paced restaurant environment.
Willingness to learn all kitchen stations and continue developing BBQ and pit skills.
