Lead Chef — Milligram (Costa Mesa, CA)

Milligram is seeking a talented, driven, and thoughtful Head Chef to lead our kitchen and help shape the next chapter of our culinary program. This is a leadership role for someone who is passionate about seasonality, product quality, and creating a food experience that feels both elevated and approachable.

At Milligram, we care deeply about ingredients, execution, and the overall guest experience. We’re building something long-term, and we’re looking for a chef who wants to grow with us.

About the Role

As Head Chef, you will be responsible for overseeing all aspects of the kitchen, from menu development and sourcing to team leadership and daily execution. You will work closely with ownership and management to ensure the food program aligns with the broader vision of the brand.

Key Responsibilities

Lead all kitchen operations, ensuring consistency, quality, and efficiency
Develop and evolve seasonal menus that reflect Milligram’s style and standards
Source and build relationships with suppliers, purveyors, and producers
Train, mentor, and develop a strong, motivated kitchen team
Maintain high standards of cleanliness, organization, and food safety
Manage food costs, labor, and inventory with a focus on sustainability and profitability
Collaborate with front-of-house leadership to create a cohesive guest experience
Oversee prep, service, and execution across all dayparts
Contribute to the development of offsite catering and special events, ensuring seamless execution and consistent quality.

Proven experience as a Head Chef or Senior Sous Chef in a high-quality, fast-paced environment
Strong leadership skills with the ability to build and inspire a team
A deep understanding of seasonal cooking and ingredient-driven menus
Highly organized with strong operational and financial awareness
Calm under pressure with a solutions-oriented mindset
Passion for hospitality and creating memorable guest experiences
Interest in contributing creatively to a growing brand
