Overview

Haven Detox Tulsa is looking for a Sous Chef that will support daily kitchen operations in a fast-paced, highly regulated inpatient treatment environment, ensuring nutritious, high-quality meals are prepared safely and consistently for clients and staff. This role partners closely with the Executive Chef and dietary team to maintain compliance, sanitation excellence, and a trauma-informed service mindset while delivering meals that support clinical outcomes and client well-being.

Key Responsibilities

Kitchen & Food Production

Lead daily meal preparation for residential clients and staff, including breakfast, lunch, dinner, and snacks
Ensure meals meet dietary requirements, allergy accommodations, medical diets, and texture modifications
Support menu execution and assist with weekly menu planning alongside the Executive Chef
Maintain consistent food quality, taste, portioning, and presentation
Oversee recipe adherence and batch cooking standards
Assist in training and mentoring kitchen staff, cooks, and dietary aides

Compliance & Sanitation

Maintain strict adherence to state health codes, food safety regulations, and facility policies
Ensure compliance with Joint Commission / CARF / JCAHO sanitation and dietary standards where applicable
Oversee kitchen cleanliness, deep-cleaning schedules, temperature logs, food storage standards, and labeling
Monitor and document HACCP, ServSafe, food temps, and sanitation checklists
Ensure safe handling of sharps, chemicals, and equipment in accordance with inpatient safety protocols
Assist in internal and external audits, inspections, and corrective action plans

Inventory & Operational Support

Assist with ordering food and supplies, verifying deliveries, and maintaining par levels
Monitor food cost, waste tracking, and inventory rotation (FIFO)
Support kitchen equipment maintenance and reporting of safety concerns
Maintain organized storage areas, freezers, refrigerators, and dry goods

Client-Centered & Safety Mindset

Maintain a calm, supportive, and trauma-informed demeanor when interacting with clients
Support behavioral health safety protocols (e.g., meal supervision readiness, restricted item awareness)
Collaborate respectfully with clinical teams when needed for client dietary care coordination

Required Qualifications

Minimum 2+ years of Sous Chef experience in a professional kitchen
Must have baking experience
Experience in high-volume food production (healthcare, residential programs, corrections, schools, etc.)
Strong knowledge of food-safety compliance, medical diets, allergies, and accommodation workflows
Ability to lead, train, and manage kitchen staff effectively
Comfort operating in a locked inpatient environment with heightened safety awareness
ServSafe Manager Certification required
Culinary degree or equivalent training preferred but not required
