About the Position
Food Service Inc. of Gainesville is seeking a dependable and experienced Assistant Dining Facility Manager to support daily operations at a military dining facility located at Fort Irwin, California.
The Assistant Dining Facility Manager will work closely with the Dining Facility Manager to supervise employees, coordinate meal service, maintain food quality and sanitation standards, control labor, and ensure the facility operates efficiently and in accordance with company and contract requirements.
This is a hands-on leadership position for someone who is organized, dependable, and comfortable working in a fast-paced, high-volume food service environment.

Key ResponsibilitiesDaily Dining Facility Operations
- Assist the Dining Facility Manager with the daily operation of the facility.
- Help coordinate food preparation, meal service, sanitation, and closing activities.
- Ensure the facility is properly staffed and prepared for each meal period.
- Monitor workflow throughout the facility and respond to operational needs.
- Provide hands-on assistance when staffing shortages or unexpected issues occur.
- Help ensure meals begin and end according to established schedules.
- Maintain a professional, organized, and mission-focused work environment.
Employee Supervision
- Supervise cooks, food service workers, cashiers, dining room personnel, and other assigned employees.
- Assign daily duties and ensure employees understand their responsibilities.
- Conduct pre-shift meetings to communicate menus, staffing assignments, safety concerns, and operational priorities.
- Monitor attendance, punctuality, uniforms, productivity, teamwork, and customer service.
- Train new employees and provide ongoing coaching to current staff.
- Address employee concerns and performance issues professionally.
- Assist with scheduling, interviewing, onboarding, and employee evaluations.
- Lead by example and maintain a visible management presence throughout operations.
Food Quality and Service
- Monitor food quality, appearance, temperature, portion size, and presentation.
- Ensure employees follow approved menus, standardized recipes, and portion-control requirements.
- Inspect serving lines before and during meal periods.
- Ensure food is fresh, properly stocked, and maintained at required temperatures.
- Correct food quality or service issues promptly.
- Help control food waste, overproduction, and improper portioning.
- Promote courteous, efficient, and professional customer service.
Food Safety and Sanitation
- Maintain compliance with food safety, sanitation, health, military, and company requirements.
- Verify that required food temperatures and sanitation records are completed accurately.
- Inspect food preparation areas, serving lines, dining areas, storage rooms, refrigeration units, and equipment.
- Ensure employees follow proper handwashing, glove use, hygiene, and cross-contamination prevention procedures.
- Maintain a clean, organized, and inspection-ready dining facility.
- Correct sanitation, food safety, and workplace safety concerns immediately.
- Support internal quality-control inspections, health inspections, and government evaluations.
Inventory and Supply Control
- Assist with monitoring food, supply, chemical, and equipment inventory.
- Inspect deliveries for accuracy, quality, quantity, condition, and proper temperature.
- Ensure products are properly labeled, dated, rotated, and stored.
- Help maintain first-in, first-out inventory practices.
- Report shortages, damaged products, inventory discrepancies, and equipment problems.
- Assist with inventory counts and supply ordering.
- Help reduce waste, product loss, and unnecessary operating costs.
Administrative Responsibilities
- Assist with employee scheduling, attendance records, labor-hour monitoring, and payroll documentation.
- Review menus, anticipated meal counts, staffing needs, and operational schedules.
- Complete or review production records, temperature logs, sanitation records, and management reports.
- Maintain accurate and organized facility documentation.
- Document operational concerns, employee issues, safety problems, and corrective actions.
- Communicate regularly with the Dining Facility Manager and company leadership.
- Assist with preparation for meetings, inspections, training, and special events.
- Assume responsibility for facility operations when the Dining Facility Manager is unavailable.
Required Qualifications
- At least two years of supervisory or management experience in food service, hospitality, institutional dining, or a related environment.
- Experience supervising employees in a fast-paced operation.
- Knowledge of food safety, sanitation, customer service, and basic food service procedures.
- Strong leadership, communication, organizational, and problem-solving skills.
- Ability to manage multiple priorities and respond calmly to operational issues.
- Ability to complete records, reports, and basic administrative tasks accurately.
- Basic computer skills, including email, spreadsheets, scheduling, and electronic reporting.
- Dependable attendance and punctuality.
- Flexibility to work mornings, evenings, weekends, and varying schedules based on operational needs.
- Ability to meet military installation access and background-screening requirements.
Preferred Qualifications
- Previous experience as an Assistant Manager, Shift Manager, Dining Facility Supervisor, Kitchen Supervisor, or Food Service Manager.
- Experience in a military dining facility, government food service operation, institutional kitchen, hospital, university, correctional facility, or other high-volume environment.
- ServSafe Manager Certification or another recognized food protection manager certification.
- Experience with labor scheduling, inventory control, production records, and quality assurance.
- Experience supervising union employees is helpful but not required.
Physical Requirements
- Ability to stand and walk for extended periods.
- Ability to bend, reach, push, pull, and perform repetitive food service duties.
- Ability to regularly lift and carry up to 40 pounds.
- Ability to work around heat, steam, refrigeration, wet floors, cleaning chemicals, and commercial kitchen equipment.
- Ability to wear required uniforms and personal protective equipment.

This is a full-time, on-site management position. Work hours may vary based on meal schedules, staffing requirements, inspections, training, special events, and operational needs.
The Assistant Dining Facility Manager must be available to work a flexible schedule and may be required to open or close the facility.
