_ _ Reports to the QA Manager

POSITION OVERVIEW:

Inspects, monitors and records compliance with:

Groundfish Finished Product Specifications

Lobster Finished Product Specifications

Raw Material Specifications including:

Whole Fish

Live Lobster

Ingredients • Packaging
Pre-Operational Sanitation Inspections
Operational Sanitation Inspections
Microbiological Sampling program
Coding & Traceability program

Understands, follows and monitors Food Safety requirements:
HACCP Plans
GMP’s
Pre-requisite programs
Understands, follows and monitors Nonconforming Products Procedures including:
Holding and segregation
Re-inspection and rework
Positive Product Release

Makes recommendations for continual Improvement of the job and department
Additional duties and responsibilities as required.

Position’s requirements-

Demonstrate Basic Math Skills
Basic English skills to identify labels and read scales

Physical activity level:

Moderate physical activity performing continuous daily activities in cold wet conditions. Requires strength, agility, stamina and speed to lift, push and pull moderate loads.
Keen sense of taste, smell and feel

. Must be able to distinguish colors
Essential Duties and Responsibilities;

The accurate inspection and packing of all finished fillets for the following: o Proper identification, coding and labeling o No contamination or adulteration o Adherence to quality standards o Proper cut and trim per standards o Correct net weights o Correct packaging size and type

The accurate inspection finished lobster products for the following: o Proper identification, coding and labeling o No contamination or adulteration o Adherence to quality standards o Proper butchering, washing and grading o Proper cooked lobster product temperatures post cooking, packing and freezing o Correct picking handling and inspection procedures . o Correct net, glaze and thawed/drained weights nc o Correct primary and master packaging size and type I

Trained to understand and follow the Companyle Non-confo rming Products Procedures to: o Identify, segregate and Hold (tatgr) ono ln-cotnyfo r oming product through inspection or interaction with line workers. o Ability and understanding too rnesampplee a rnd re-inspect products on Hold for nonconformances or rework. o Understand and monitorC Rejectiroon, Positive Product Release or Product Disposal procedures • Trained to understand, follow and monPitor the Company Coding and Traceability Procedures
Trained to Perform Daily Sanitation audits in relief of the QA Manager
Trained to understand and follow Company Microbiological Sampling/Testing Program
Trained to understand and follow all Plant Safety Plans & Procedures
Trained to understand and follow al General Plant Rules
Trained to monitor chemical/ingredient use including:
Assist QA Manager with Product/Process development
Trained to maintain good housekeeping in the inspection area
Trained to record and maintain proper forms and records pertaining to QA inspections
