BAKERY PRODUCTION ASSISTANT

Ballyhoo Hospitality Group is seeking an energetic, talented, hospitality focused Bakery Production Assistant to join Buck Russell’s Bakery in Wilmette.

The concept blends the charm of a classic bakery and ice cream parlor with an approachable menu that includes freshly baked pastries, deli style sandwiches, house made desserts, and small batch ice cream. The space was designed to feel welcoming and nostalgic, encouraging guests to stop in throughout the day for coffee and pastries, lunch with friends, or a sweet treat in the evening. Buck Russell’s has become a beloved community gathering place where families, neighbors, and regulars come together for simple food made well.

Bakery Production AssistantPosition Summary

The Bakery Production Assistant supports the daily production of house-made ice cream, gelato, sorbets, and frozen desserts within a high-volume bakery and pastry operation. This role works closely with the Pastry Chef and production team to ensure all products are prepared with consistency, precision, quality, and attention to detail.

The ideal candidate is passionate about ice cream and pastry, enjoys hands-on production, and takes pride in creating high-quality products that complement the bakery's overall dessert program and guest experience.

Essential Responsibilities

Assist with the daily production of house-made ice creams, gelatos, sorbets, and other frozen desserts.
Accurately weigh, measure, and prepare ingredients according to established recipes and production standards.
Monitor cooking, chilling, aging, and freezing processes to ensure proper texture, consistency, and quality.
Assist with the preparation and incorporation of inclusions such as cookies, brownies, cakes, and other bakery components.
Portion, package, label, date, and properly store finished frozen products.
Maintain proper product rotation and inventory using established FIFO procedures.
Follow production schedules to ensure all ice cream and dessert products are prepared and available for daily bakery and restaurant needs.
Maintain consistency in flavor, texture, appearance, and portioning across all batches.
Assist with the development and testing of new flavors and seasonal offerings.
Monitor ingredient inventory and communicate shortages or production needs to the Pastry Chef.
Minimize waste through accurate scaling, proper storage, and efficient production practices.
Maintain a clean, organized, and sanitary ice cream production area at all times.
Follow all food safety, sanitation, allergen, and temperature-control procedures.
Properly clean and sanitize all equipment, tools, containers, and work surfaces following production.
Communicate effectively with the Pastry Chef and bakery team regarding production needs, quality concerns, and equipment issues.
Assist with other pastry and bakery production as needed to support the overall operation.

Bakery & Hospitality Focus

Understand how ice cream and frozen desserts contribute to the bakery's overall product offering and guest experience.
Maintain the highest standards of quality, craftsmanship, consistency, and presentation.
Collaborate with the pastry and bakery teams to create cohesive desserts and products.
Demonstrate urgency and organization while maintaining attention to detail in a fast-paced production environment.
Take pride in producing products that reflect the bakery's standards and brand.
Support seasonal menu changes, special events, catering, and high-volume production periods as needed.

Qualifications

Previous experience in ice cream, gelato, pastry, baking, or culinary production preferred.
Professional pastry or culinary education is a plus.
Basic understanding of ice cream and frozen dessert production preferred.
Strong attention to detail and commitment to consistency.
Comfortable working with recipes, scales, production sheets, and standardized procedures.
Ability to work efficiently in a high-volume production environment.
Strong organization and time-management skills.
Ability to safely operate commercial kitchen and ice cream production equipment.
Ability to work independently while contributing effectively to a team.
Willingness to learn advanced ice cream, pastry, and production techniques.
Ability to work flexible hours, including early mornings, weekends, and holidays as required.
