Full Job Description

David Burke Prime is seeking an experienced Sous Chef to help lead our kitchen. Reporting to the Executive Chef, you will run the line during service, uphold our standards for prime steaks and seafood, and develop the cooks coming up behind you. This is a hands-on leadership role in a high-volume, upscale kitchen.

WHAT YOU'LL DO

- Lead the kitchen during assigned shifts: expedite, run the pass, and hold ticket times and quality to standard

- Supervise, train, and schedule line cooks; give clear direction and hold the team accountable

- Execute and enforce recipe specs, plate presentation, and portion control on every dish that leaves the kitchen

- Manage prep lists, daily production, and station readiness ahead of service

- Oversee ordering, receiving, and inventory; control food cost and minimize waste

- Maintain strict sanitation and food safety standards, including HACCP and local health department requirements

- Communicate with front of house on specials, 86s, and VIP or large-party needs

- Step in for the Executive Chef as needed and contribute to specials and menu development

WHAT WE'RE LOOKING FOR

- 2+ years as a Sous Chef, or 4+ years as a lead line cook in an upscale, high-volume kitchen

- Strong grill, saute, and butchery skills; steakhouse or fine dining experience strongly preferred

- Proven ability to lead a team and stay composed under heavy volume

- Working knowledge of food cost, inventory, and labor management

- ServSafe certification, or the ability to obtain one within 30 days of hire

- Culinary degree is a plus, not a requirement

- Able to stand for extended periods, lift up to 50 lbs, and work in a hot kitchen environment

SCHEDULE

Full-time, salaried. Nights, weekends, and holidays required. Open and close availability expected.
