Meat Cutter/Butcher – Chubby Cattle Irvine

This position is employed exclusively by Chubby Cattle Irvine LLC. No employment relationship is established with any other affiliated or sister company.

Position Summary

As a Food Production Specialist, you will play a vital role in our culinary operations, ensuring that every dish meets our high standards of quality and safety. You will engage in food preparation, packaging, and customer service, all while maintaining a clean and efficient kitchen environment. Your passion for the food industry and your culinary skills will shine as you contribute to creating delightful dining experiences for our customers.

Start Date: Upon onboarding completion. All required pre-employment notices and documents will be provided at or before the start date, as required by law.

Key Responsibilities

Butcher, portion, and prepare a variety of meats, poultry, and fish according to restaurant standards and recipes
Properly handle, store, and rotate meats to maintain freshness and prevent cross-contamination
Accurately cut different beef origins, handle marbling, and ensure precise portioning of various cuts
Maintain meat storage, rotation, and freshness while avoiding cross-contamination
Classify and portion beef according to grades (e.g., A5 Wagyu, Australian M9+, U.S. Prime)
Assist in receiving and inspecting meat deliveries, ensuring consistent quality, and reporting any inventory or quality issues

Qualification

Must be legally authorized to work in the U.S.
Flexible availability, including early mornings, evenings, weekends, and holidays
Possession of, or ability to obtain upon hire, a California Food Handler’s Card
Strong work ethic and team-oriented mindset

Preferred qualifications

Knowledge of Wagyu grading, beef cuts, and safe butchering practices
Proficiency with meat saws, grinders, and cutting tools
Strong attention to detail, cleanliness, and product consistency
Excellent team communication skills
