Full Job Description

Overview
We are in search of a Butcher/Salumist for our new Butchery, Market & Cafe concept!

Duties will include whole animal fabrication, processing of fresh sausages, salumi and dry-aging. The production in this concept will also support our existing full service restaurant located across the street. The estimated opening is slated for Fall 2026.

This is a unique opportunity for someone that truly has a passion for the old world techniques of butchery and salumi production. Candidates must have a proven skill set and will have the opportunity to demonstrate their skills hands-on as part of the interview process.

Duties

Skillfully cut, trim, and prepare various types of meat using professional knife techniques
Package meat products efficiently while maintaining freshness and presentation standards
Ensure all food handling practices adhere to safety regulations and hygiene protocols
Assist in food preparation tasks for retail display or culinary use, supporting kitchen operations
Maintain cleanliness and organization of workstations, tools, and storage areas
Provide excellent customer service by answering questions about meat cuts and product recommendations
Follow proper food safety procedures during all stages of meat processing and packaging

Qualifications

Proven experience in food production, meat cutting or culinary environments, preferably within the food industry or restaurant settings
Strong knife skills with the ability to perform precise cuts and butchering techniques
Knowledge of food safety standards and proper food handling procedures
Experience in food preparation, packaging, and maintaining cleanliness in a kitchen or retail environment
Excellent attention to detail and ability to work efficiently under pressure
Good communication skills to assist customers and collaborate with team members
Prior kitchen or restaurant experience is highly desirable but not mandatory; enthusiasm for learning is essential

Pay: From $30.00 per hour
