Full Job Description

We're hiring an Executive Chef for a new supper club opening in downtown Houston.

The room seats 100. It's in a restored early-1900s building in the Main Street district. Guests buy one ticket that covers a multi-course dinner and a live variety show. The kitchen doesn't exist yet. Whoever takes this job helps decide what goes in it.

We're not new to this. The venue is being opened by the people behind Poppy Tart Productions, which has been producing live variety and cabaret in Houston since 2022 — roughly 60 ticketed shows to date, most of them at a recurring pop-up residency. You can see that work at poppytartproductions.com. What's new is the restaurant. The show side is proven; the kitchen is the part we're building, and it has to stand on its own as a restaurant, not read as catering attached to a performance. That's the job.

You'd own the food. Not "collaborate on the culinary direction" — own it.

We're keeping the venue name and address off the posting until our lease is fully executed. We'll tell you both on the first call. We'd rather be quiet about it for now than announce something before it's signed.

About the hours, because it's the first thing you'll want to know

We're open Tuesday through Saturday. Sunday and Monday we're closed, and we mean closed, not closed-but-you're-still-there-doing-inventory.

The week isn't evenly weighted. Tuesday and Wednesday run a light lounge menu off one station. Thursday sits in between. Friday and Saturday are the real nights — full prix fixe, whole brigade on the line — and those two are the ones we need you there start to finish. The late-night bar snacks after 11 on Friday and Saturday are the closing cook's problem, not yours.

It averages out to roughly 32 hours a week. We know that's not normal for this job. It's not an accident and it's not a bait-and-switch: we built the operating week around a show calendar instead of maximum table turns, and this is what fell out of that. You can check it against reality in your first week.

What the job actually is

You'll build the prix fixe menu from scratch and set the standards for how it goes out. Because dinner is paced to a performance, you'll work with our creative lead on when courses land — closer to banquet timing discipline than to a normal dining room, executed at a level that holds up.

You'll hire and run the kitchen team: two line cooks and a dishwasher on flagship nights, less midweek. You'll own sourcing, vendors, ordering, receiving, and inventory, and you'll manage food cost against a 28% target. Before any of that, you'll have real input on the kitchen layout and equipment, because we haven't bought it yet.

Who we're hoping applies

Five or more years running a kitchen or as a senior sous, with the menu and the numbers actually on your plate. Experience with prix fixe, tasting menus, or any fixed-format service at volume. Strong batch and make-ahead technique, since our prep window is tight and the menu has to be built for that.

We'd like you to be able to talk about food cost with specifics — what you inherited, what you got it to, how. Texas Food Manager and TABC, current or something you can get before we open.

Opening experience helps. So does knowing who to call in the Houston vendor market.

What we're offering

$80,000 base, salaried and W-2, plus a performance bonus tied to food cost. We'll walk you through how it's structured on the call.
