Sous Chef – Boutique Inn, Restaurant & Events

Location: Brandywine Valley, PA
Job Type: Full-Time

Position Summary

The Sous Chef is a key leadership role responsible for executing daily kitchen operations across restaurant and event programming. Reporting directly to the Executive Chef, this position ensures consistent culinary standards, efficient service execution, and the development of a high-performing kitchen team.

This is a hands-on leadership role in a fast-paced, multi-outlet environment requiring strong organization, technical skill, and the ability to lead service with confidence.

About the Property

We are a boutique, high-end inn in the Brandywine Valley offering a dynamic culinary program rooted in seasonal, locally sourced ingredients. Our cuisine is inspired by French, Spanish, and Mediterranean traditions with a strong farm-driven philosophy.

Our programming includes:

Tasting Room Restaurant (brunch & dinner service)
Weddings and private events
Corporate and social events
Breakfast service for Manor House guests
Wine bar and tasting experiences
Property-wide culinary events and special programming

Core Responsibilities

Kitchen Leadership & Service Execution

Lead and execute daily service across restaurant and event operations
Expedite service, ensuring quality, consistency, and timing
Act as chef-in-charge in the absence of the Executive Chef

Culinary Execution & Standards

Oversee prep and production, including meat and fish butchery, pastry components, and vegetable breakdown
Maintain consistency in recipes, plating, and overall product quality
Contribute to seasonal menu and recipe development

Operations & Systems

Assist with ordering, inventory, and cost control practices
Build and maintain relationships with local farmers and purveyors
Ensure compliance with all food safety and sanitation standards

Team Development

Train, coach, and support line cooks and prep staff
Foster a culture of accountability, professionalism, and teamwork
Assist with scheduling and daily staff management

Qualifications

3+ years of progressive experience in a professional kitchen
Experience in restaurant and/or event-driven culinary environments
Strong leadership and service management skills
Advanced knife skills and foundational culinary techniques
Experience with:
Meat and fish butchery
Sauce development
Sous-vide cooking
Catering and event execution
Familiarity with ordering, purchasing, and inventory systems
Strong understanding of kitchen sanitation and food safety standards

Certifications

ServSafe Certified (or ability to obtain)
Food Handler Certification (as required)
