Duties

Assist the head sushi chef in supervising all aspects of sushi and Japanese cuisine preparation, ensuring consistency and quality.

Oversee food production processes, including ingredient handling, portion control, and presentation to meet our premium standards.
Ensure strict adherence to food safety sanitizing procedures, sanitation protocols, and proper food handling practices across the kitchen.
Manage inventory control for sushi ingredients and supplies, minimizing waste while maintaining freshness and availability.
Collaborate on menu planning and development to introduce innovative dishes that delight our guests while maintaining operational efficiency.
Coordinate with catering and banquet teams to deliver seamless service for special events or large parties.
Monitor kitchen operations during shifts to ensure smooth workflow, timely service, and exceptional hospitality.

Skills

Extensive culinary experience with a focus on sushi preparation and Japanese cuisine in fine dining or restaurant environments.
Proven supervising experience managing kitchen teams in fast-paced settings with high standards for quality and safety.
Strong knowledge of food safety sanitizing procedures, food handling regulations, and hygiene practices.
Experience with inventory management, cost control, and food production planning within the food industry.
Skilled in menu planning, food service management, catering coordination, and shift management.
Leadership qualities with the ability to motivate teams while maintaining a positive work environment.
Excellent communication skills combined with a passion for hospitality and delivering memorable guest experiences.
