Full Job Description

Prestigious private club in Amenia, New York is seeking a talented, creative, and experienced Sushi Chef to lead its sushi program and deliver an exceptional dining experience for members and guests. This is a full-time, year-round opportunity requiring flexibility to work a varied schedule, including evenings, weekends, holidays, and extended hours as needed to support club operations and seasonal business demands.

The ideal candidate is an accomplished sushi chef with experience in high-end restaurants, luxury resorts, or private clubs. They possess exceptional technical skills, impeccable presentation standards, strong leadership abilities, and a commitment to sourcing premium ingredients while maintaining the highest standards of food quality, safety, and service. This individual will oversee all aspects of the sushi operation, mentor culinary staff, and continuously elevate the dining experience through creativity and innovation.

Responsibilities include, but are not limited to:

Lead all aspects of the sushi program, ensuring exceptional quality, consistency, presentation, and execution
Develop seasonal and innovative sushi menus utilizing premium local and imported ingredients
Manage daily operations of the sushi station, including food preparation, inventory, food costs, portion control, and labor management
Hire, train, mentor, and supervise sushi cooks and support staff while maintaining established culinary standards
Monitor product quality, freshness, and presentation through regular quality control
Forecast business levels and maintain appropriate inventory to minimize waste and maximize profitability
Collaborate with Culinary Leadership on menu development, pricing strategies, ingredient sourcing, and operational improvements
Maintain strict compliance with HACCP standards, food safety regulations, sanitation protocols, and workplace safety practices
Ensure all kitchen equipment is properly maintained and report maintenance needs promptly
Foster a clean, organized, and efficient kitchen environment
Address member and guest requests professionally while providing exceptional hospitality
Participate in culinary meetings, trainings, and ongoing departmental initiatives

Requirements:

Strong command of English language; outstanding writing and verbal skills
Excellent references from both current and former employers
Minimum five years of experience as a Sushi Chef in a luxury restaurant, private club, or resort environment
Experience with renowned, high-end sushi concepts such as Nobu, Zuma, Masa, Sushi Samba, or comparable establishments strongly preferred
Culinary degree or professional culinary certification preferred
Extensive expertise in traditional and modern sushi preparation techniques
Proven experience sourcing premium ingredients and developing seasonal menus
Strong leadership experience managing and training culinary teams
Thorough understanding of food cost controls, inventory management, and kitchen operations
Exceptional attention to detail with uncompromising standards for quality, taste, and presentation
Comprehensive knowledge of food safety regulations, HACCP, and sanitation procedures
Professional, service-oriented demeanor with outstanding communication skills
Ability to remain composed and perform effectively in a fast-paced, high-volume environment
Able to legally work within the United States for any employer

Compensation: $100,000–$115,000 per annum + Benefits
