Full Job Description

RYE is seeking an experienced and motivated Sous Chef to join our culinary leadership team. This is a hands-on position for someone who is passionate about food, thrives in a fast-paced kitchen and takes pride in maintaining high standards of quality and consistency.

The Sous Chef works closely with the Chef to oversee daily kitchen operations, lead and develop the culinary team, maintain food quality and ensure every plate leaving the kitchen meets RYE standards.

Responsibilities

Work alongside the Chef to oversee day-to-day kitchen operations
Lead kitchen service and maintain organization, communication and consistency during busy shifts
Supervise, train and support cooks, prep staff and dish team
Assist with daily food preparation and production
Ensure dishes are prepared according to recipes, specifications and presentation standards
Maintain consistency in portioning, preparation and plating
Assist with seasonal menu development, specials and new dishes
Monitor product quality and freshness
Assist with ordering, receiving and proper storage of food and supplies
Maintain appropriate inventory levels while helping control food costs and waste
Ensure proper food rotation, labeling and storage
Maintain a clean, organized and professional kitchen
Enforce food safety, sanitation and workplace safety standards
Assist with scheduling and managing kitchen labor as needed
Help identify training opportunities and hold team members accountable to expectations
Communicate effectively with front-of-house leadership to ensure smooth service
Step into any kitchen position when needed
Help create a positive, professional and team-focused kitchen culture
Assume leadership of the kitchen in the Head Chef’s absence

What We’re Looking For

Previous professional kitchen experience required
Previous Sous Chef, Kitchen Manager or culinary leadership experience preferred
Strong cooking skills and understanding of proper culinary techniques
Experience working with scratch-made food and quality ingredients
Strong organization and time-management skills
Ability to lead calmly and effectively during high-volume service
Excellent communication and problem-solving skills
Understanding of food cost, portion control, inventory and waste management
Strong knowledge of food safety and sanitation practices
Dependable, professional and accountable
Ability to work evenings, weekends and holidays as required
Ability to stand for extended periods and safely lift and carry kitchen products and equipment

RYE is a chef-driven restaurant in downtown Appleton focused on thoughtfully prepared, scratch-made food, quality ingredients and genuine hospitality.

Our kitchen works with seasonal ingredients and takes pride in preparing food with care, from sauces and soups made from scratch to seafood, steaks and composed entrées.

We are looking for a Sous Chef who wants to be an active part of the kitchen, lead by example and help us continue raising the standard of what we do every day.
