SOUS CHEF

The Hatch Rotisserie & Bar | Paso Robles, CA

The Hatch is looking for a full-time Sous Chef who can cook, lead, organize, teach, and keep a busy kitchen moving in the right direction.

We cook from scratch. We work with live fire. We care about the details.

This is not a position for someone who wants to stand on the sidelines with a clipboard. Our Sous Chef is an active kitchen leader—working the line, developing the team, protecting our standards, and helping turn great ideas into consistently great food.

We want someone who takes ownership, communicates clearly, stays composed under pressure, and wants to help us continue serving exceptional food.

The Position

The Sous Chef reports to the Chef de Cuisine and helps oversee the daily operation of The Hatch kitchen. You will be responsible for maintaining food quality, building reliable kitchen systems, developing the culinary team, and leading service when the Chef de Cuisine is not present.

You should be comfortable moving between leadership and execution. Some days that means coaching a cook, organizing prep, checking inventory, and communicating with FOH. Other days it means jumping onto the line and helping the team push through a packed dinner service.

What You’ll Do

Help oversee daily kitchen operations and nightly dinner service
Lead actively from the line with urgency, control, and professionalism
Establish daily prep lists, pars, priorities, and station assignments
Delegate work clearly and follow through to ensure it is completed correctly
Maintain food quality, consistency, portioning, and presentation
Ensure recipes, procedures, and established standards are followed
Train, coach, and develop cooks and prep team members
Provide direct, constructive feedback and address performance issues
Help create and maintain written systems, recipes, checklists, and procedures
Monitor prep levels, product usage, waste, and inventory
Assist with ordering, receiving, product rotation, and proper storage
Support food-cost and labor-cost goals
Maintain a clean, organized, and inspection-ready kitchen
Enforce sanitation, food-safety, cooling, labeling, and temperature-control procedures
Communicate clearly with the Chef de Cuisine, FOH leadership, and ownership
Help execute menu changes, specials, events, and kitchen projects
Lead kitchen operations in the Chef de Cuisine’s absence
Build a kitchen culture based on accountability, craftsmanship, respect, and teamwork

What We’re Looking For

At least three years of professional kitchen experience
Previous experience as a Sous Chef, Kitchen Lead, or strong Lead Line Cook
Strong line-cooking fundamentals and the ability to work multiple stations
Experience organizing prep, pars, ordering, inventory, and receiving
The ability to train and develop cooks with different experience levels and communication styles
Clear communication and strong organizational skills
A calm, solutions-oriented approach during high-volume service
Attention to detail without losing sight of the entire kitchen
The confidence to hold standards without bringing ego or unnecessary drama into the room
Current California Food Handler certification
Availability to work nights, weekends, and holidays
The ability to stand for extended periods and lift up to 50 pounds

Experience with wood-fired cooking, rotisserie cooking, butchery, smoking, fermentation, sous vide, or high-volume scratch kitchens is a plus.
