Viennoiserie Maker – Sacre Sucre (Baltimore, MD)

About Us
Sacre Sucre is a French-inspired patisserie and coffee shop known for our dedication to craft, precision, and creativity. We produce all our pastries from scratch with a focus on technique, consistency, and aesthetics. Our viennoiserie program features traditional laminated doughs and seasonal variations rooted in French pastry fundamentals.

Position: Viennoiserie Maker (Full-Time)
Sacré Sucré is seeking a skilled and disciplined baker to join our production team in Baltimore with a primary focus on viennoiserie.

This role is heavily focused on laminated dough production, croissant shaping, proofing, bakeoff, and weekend morning production. We are looking for someone organized, technically focused, and comfortable working early mornings in a structured pastry environment.

This is not a restaurant line cook position — it is a production-focused bakery role requiring consistency, repetition, and attention to detail.

Responsibilities

Produce, laminate, and shape croissant doughs (plain, chocolate, almond, and seasonal variations).
Prepare and bake other viennoiserie items such as kouign-amann, brioche, and buns.
Manage proofing schedules and baking timelines efficiently.
Maintain consistency, precision, and presentation in all products.
Follow recipes, production plans, and sanitation protocols.
Work collaboratively with the pastry team to ensure smooth production flow.
Assist with prep for new seasonal items and R&D when needed.
Maintain a clean and organized workspace.

Requirements

Minimum 1–2 years of experience working with laminated doughs in a professional bakery or patisserie setting.
Strong knowledge of fermentation, butter incorporation, and dough handling.
Excellent attention to detail and commitment to quality.
Ability to work early mornings and weekends.
Team player with a positive attitude and strong work ethic.
Must be able to lift up to 50 lbs and stand for extended periods.

Schedule & Compensation

Full-time position, typically 5 days/week including weekends.
Early morning shifts required (starting around 4-5 AM).
Competitive hourly wage based on experience.
