Executive Sous Chef – Estiatorio Plaka (Greek Restaurant)

Estiatorio Plaka is seeking a skilled and motivated Executive Sous Chef to support our kitchen leadership and help deliver authentic Greek cuisine in a fast-paced, high-quality environment.

Salary: $60,000–$70,000 + Performance Bonus

Location: Baltimore

About the Role

We are seeking an Executive Sous Chef who understands that great kitchens are built on strong systems, disciplined cost controls, inventory accuracy, labor management, and consistent execution.

This position is ideal for a chef who enjoys leading teams, managing kitchen finances, controlling food costs, reducing waste, and driving operational excellence while maintaining high culinary standards.

You will work directly with ownership and management to improve profitability, kitchen efficiency, staff development, and guest satisfaction.

Key ResponsibilitiesFinancial & Operational Management

Maintain food cost within company targets.
Monitor and manage labor costs through effective scheduling and staffing.
Conduct weekly inventory counts and analyze variances.
Oversee purchasing and vendor relationships.
Control waste, spoilage, and portion consistency.
Develop and maintain recipe costing and yield standards.
Review kitchen financial reports and identify opportunities for improvement.

Kitchen Leadership

Lead, coach, and develop kitchen staff.
Train team members on recipes, production standards, and kitchen systems.
Ensure consistent execution of menu items.
Maintain high standards of food quality and presentation.
Support hiring, onboarding, and performance management.

Inventory & Purchasing

Manage inventory levels and ordering.
Ensure proper product rotation and storage procedures.
Monitor usage trends and adjust purchasing accordingly.
Establish accountability for inventory accuracy.

Catering & Production

Coordinate production for catering and banquet events.
Manage prep schedules and staffing requirements.
Ensure efficient execution of high-volume events.

Required QualificationsMust Have Experience In:

Food cost management
Labor cost control
Inventory management
Purchasing and ordering
Vendor negotiations
Recipe costing
Kitchen scheduling
Team leadership

Preferred Experience

High-volume restaurant operations
Catering or banquet production
Multi-outlet food service operations
Experience managing food cost percentages and labor targets
Familiarity with inventory and scheduling software

What Success Looks Like

Within your first 90 days, you will be expected to:

Maintain inventory accuracy
Improve food cost performance
Reduce waste and shrinkage
Develop efficient labor schedules
Build accountability within the kitchen team
Support profitable restaurant and catering operations
