Full Job Description

The Canopy by Hilton San Francisco SOMA District is looking for an executive chef. We are looking for dynamic, enthusiastic multitaskers to be part of our team to create “Good Energy” for our Guests and our People, true to the Brand vibe.

Executive Chef

We are looking for an Executive chef to be part of our team. You would be overlooking 3 F&B outlets along with Banquets. As Executive chef you will be responsible for the financial and operational success of the BOH of the F& B of the hotel.

Core responsibilities

Recruit, train and monitor the kitchen staff to be highly efficient
Inventory control and food costing for multiple locations
Influence restaurant sales by reviewing menu and merchandising prices.
Help devise marketing strategies that widen brand awareness and generate new or repeat customers.
A keen sense of taste and smell, as well as an aesthetic appreciation of food presentation,
Responsible for designing, planning and promoting the menus for every restaurant of the company
Examine the freshness of ingredients, conduct food tastings and evaluate food presentation.
Ensure that the kitchen team strictly adheres to state and federal regulations when it comes to food storage, handling and preparation and other safety and sanitation codes involving dining utensils, kitchen equipment and overall cleanliness. Knowledge of OSHA standards
Collaborates and works with other team members and cross-functional teams in a productive, professional and thoughtful way.
Employee supervision and development, staffing and scheduling, and decision making
Have sufficient knowledge of multi-ethnic cuisines.
Maintain control systems assuring quality and portion consistency and fosters an awareness of the importance of food preparation.
Manage labor cost and strategies to ensure food and beverage profitability
Create menus with new or existing culinary creations ensuring the variety and quality of each item
Work closely with the General Manager and Sales and Operations team at each hotel to drive the entire Food and Beverage operation through immediate and long-term planning.
Maintain a proactive approach to problem solving
Establish and maintain standard operating procedures for the Culinary department.
Assist in the preparation for Food & Beverage budget discussions.
Comply with nutrition and sanitation regulations and safety standards
Communicate effectively with guests, co-workers and management.
Ensure all communications reach their desired recipients.
Maintain a favorable working relationship with all other hotel team members to foster and promote a cooperative and harmonious working climate.
Perform all duties and responsibilities in a timely and efficient manner in accordance with established company policies and procedures to achieve the overall objectives of this position

Requirements

● 4-5 years of experience as an Executive chef in a branded full-service hotel chain / high end restaurant

● Must have or able to obtain Food Safety Certification

● Prior experience of working in a branded/ franchised Hotel is preferred

● Ability to manage multiple kitchens

● Budgeting skills to control costs

● Ability to handle multiple tasks at once

● Knowledge of the food industry and trends

● Incredible time management skills

● Ability to create new menu items

● Basic computer skills and ability to learn

● Travel between properties will be required thus must be able to drive

● Must be able to work weekends and Holidays

● Flexible work hours
