Production Cook

Darn Good Soup Bloomington, IN 35 hours/week

$16 – $17 / hour

We make scratch-made soup in Bloomington and sell it through our shop, our partner Chocolate Moose, wholesale accounts, and catering. This fall we’re opening a production kitchen and adding locations, so we need to make a lot more of it.

THE JOB

You work with our Head Chef in our production kitchen. Most of what you make gets delivered out to our other locations, and some of it gets served right there at the counter. It’s batch cooking on a schedule rather than a la carte, so there’s no ticket rail and no dinner rush.

The job has five parts. How much of each you do depends on the day, and some days you won’t touch one of them at all:

Prep. Breaking down vegetables, portioning, measuring, and staging so a cook can start clean.
Cooking with the Head Chef. Learning our recipes and how we want them made.
Cooking on your own. Working from our written recipes, with her a phone call away.
Everything else a kitchen needs. Stocking, rotating product, receiving deliveries, cooling and labeling soup, and washing pots and pans.
Serving customers. Usually at our production kitchen counter, sometimes at another location.

That solo cooking share starts small and grows. In your first weeks you’ll cook alongside the Head Chef on nearly everything. Within a few months we want you running batches by yourself on the days she’s elsewhere. How fast that happens is up to you.

We’ll also want you telling the Head Chef what you’re seeing: what ran short, what took longer than it should, what tasted off. She won’t be standing in the kitchen every day, so a lot of what she knows will come from you.

Most weeks run around 35 hours. It moves a little week to week depending on how busy we are. Most shifts run 7am to 3pm, and the Head Chef sets which days.

If you want the energy of a busy dinner service, this isn’t that kitchen.

WHAT WE NEED

Real cooking experience. A line, a prep station, or a production kitchen.
You cook from a written recipe and get the same soup every time. When one of our recipes doesn’t work, you tell the Head Chef the same day instead of quietly fixing it yourself.
You can be left alone in a kitchen. Some days you’re the only cook in it, and what you make that day is what we sell.
You know how a cooler should be organized and how product gets rotated.
You take it personally when a batch isn’t right.
