Cellar Operator, Mighty Squirrel Brewing Co., Waltham, MA
Overview of Position
We have been successfully operating our brewery in Waltham, MA since 2018, and we currently have a 30-bbl and 10-bbl brewhouses. We are looking for an experienced brewer to join our team and help manage the brewing operations. We are looking for someone with extensive brewing experience, a strong mechanical background, a thorough understanding of brewing science and recipe development, and experience managing people. The candidate will ideally be able to join our team in July, 2026.
You will manage a state-of-the-art brew house with a canning line in an 18,000 sq. ft brewery space that currently produces around 20,000 barrels annually. Position Summary
- Safe handling of cleaning chemicals, gases, pressurized vessels, hot liquor, etc. and general promotion of safety and quality culture within the brewery
- Monitor fermentation by reading and logging gravities, pH, and temperature of beer daily
- Dry hopping the prescribed amount of hops to a designated fermenter
- Yeast management, including cell counting and the harvesting and pitching of yeast while following sanitary procedures
- Maintain a sanitary environment in the cellar at all times, including but not limited to cleaning floors, walls, tanks, and other brewing equipment
- CIP and SIP of fermenters and brite tanks
- Perform assessment of fermenting beer for appropriate processing, such as dry hopping, crashing tanks and removing yeast
- Transferring beer from fermenter to brite tank in a sanitary manner
- Applying the correct pressure and volume of compressed CO2 gas to brite tanks for carbonation
- Proper use of lab equipment including Invisible Sentinel and CBox.
- Proper use and maintenance of cellar parts and equipment including hoses, gaskets, pumps, etc.
- Using Ekos for expressing task completion
- Ensure department maintains a commitment to consistent and quality products
- Open, effective, and professional communication with all team members
- Other tasks may be assigned as needed
Physical Requirements
- Ability to work in a team environment
- Ability to stand for prolonged periods
- Ability to stoop, crawl, twist, turn, lift, kneel, climb ladders and stairs
- Ability to regularly lift/carry 44 pound boxes, 55 pound bags and periodically lift/move 165 pounds
- Able to work in a production environment which may be loud, wet, slick, humid, cold and/or hot
- Ability to multitask and manage time efficiently without loss of attention to quality
- Able to comply with safe chemical handling procedures, including personal protection equipment such as gloves and goggles
Desired Skills and Experience
- Must be 21 years of age or older at the time of application
- Able to pass a post-offer, pre-employment background check
- Strong understanding of how to operate safely and maintain a safe working environment
- Minimum 2 years of brewery experience
- Strong work ethic and self-starting attitude
- Good interpersonal skills and team spirit
- Able to operate a forklift and pallet jack
- Ability to keep meticulous digital records via daily data entry
- Strong possession of common sense in all areas of work, including problem-solving and communication
- The desire to work in a fast-paced, growing company
Compensation, Benefits, and Perks

Pay: $55,000.00 - $70,000.00 per year
