Full Job Description

Job Overview

Step into a high-impact leadership role at two of our locations: Aloy Thai Cuisine (Boulder, CO) and Aloy Modern Thai (Denver, CO) Denver’s Westword “Best Thai” and Diners, Drive-Ins and Dives-featured gem. As Assistant Restaurant Manager, you’ll partner directly with the GM to run two 300+ cover/night operations, drive profitability, and deliver authentic Thai hospitality in the heart of Bouder and near the Coors Field Ballpark. This is a hands-on, growth-track position in a family-owned, farm-to-table brand that’s tripled revenue since its 2017 DDD debut.

You’ll own 25%–30% food cost, lead catering sales, co-manage weekly inventory and food ordering, and inspire a 40+ person team all while leveraging Toast POS to fuel data-driven decisions. With a $70K–$80K base (plus bonus potential) and a proven path to GM, this is your chance to grow with a local powerhouse.

Responsibilities

Lead daily FOH/BOH shifts — orchestrate guest flow, timing, and 300+ covers with precision
4.5 days work per week
Build and coach to 30+ person teams — hiring, training, scheduling, and culture-building
Hit 25%–30% food cost via daily waste logs, portion audits, and vendor price checks in Toast
Co-own weekly food & liquor inventory with GM — full physical counts, variance reports, Toast sync
Partner with Kitchen Manager on supply ordering — forecast specials, set pars, negotiate with local vendors.
Drive catering revenue (inside + off-site) — quote, upsell, staff, and execute events for 10–500 guests
Oversee craft cocktails, happy hour, and private dining (up to 120 seats)
Resolve guest issues instantly to protect 4.6+ star ratings
Execute opening/closing, cash handling, and Boulder and Denver health compliance
Boost sales through upselling, loyalty programs, and social media tie-ins
Employees training program to boost sales through upselling, loyalty programs, and social media tie-ins
Collaborate quarterly targets with GM

Experience & Requirements

3+ years restaurant management
Toast POS power user— inventory, reporting, mobile pay, KDS
ServSafe Manager + TIPS (or within 30 days)
Proven 25%–30% food cost control— recipe costing, waste tracking, supplier management
Hands-on inventory leadership— full cycle counts, variance analysis
Food ordering experience— par sheets, forecasting, vendor negotiations
Catering sales & execution— on-site + off-site, booking to delivery
Labor scheduling, basic P&L, high-volume problem-solving
Full availability: nights, weekends, holidays (40–50 hrs/wk)
Passion for Thai cuisine, craft cocktails, and guest obsession

Compensation & Benefits
