The Chloe Nashville | Sous Chef

Location: 1908 Acklen Ave, Nashville, TN

Reports To: Executive Chef

JOB PURPOSE

The Sous Chef of The Chloe is responsible for supporting the Executive Chef in leading and inspiring the culinary team to achieve exceptional dining experiences while ensuring efficiency and consistency in kitchen operations. This role plays a key part in executing high-quality dishes, maintaining kitchen organization, and upholding The Chloe’s philosophy of culinary excellence, hospitality, and team development.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Culinary Leadership:

Assist the Executive Chef in developing and executing menu items, incorporating seasonal ingredients and local flavors.
Lead the kitchen team during service, ensuring that all dishes are prepared to The Chloe’s standards of taste, presentation, and timing.
Provide guidance and mentorship to line cooks, prep cooks, and kitchen staff, fostering a collaborative and supportive environment.

Inventory and Cost Management:

Monitor kitchen inventory, including food and supplies, ensuring stock levels are adequate and efficient orders are placed as needed.
Maintain accurate records of food usage, conducting weekly inventory counts, and reporting any discrepancies.
Work with the Executive Chef to manage food costs, minimize waste, and optimize ingredient usage.

Food Safety and Sanitation:

Ensure all food is prepared according to health and safety regulations, maintaining a clean and organized kitchen.
Oversee daily and weekly cleaning schedules, ensuring all kitchen areas and equipment are properly sanitized.
Train staff on proper food handling procedures and ensure compliance with local health department regulations.

Menu Development and Innovation:

Assist in the testing and tasting of new recipes, providing feedback to enhance flavor profiles and presentation.
Stay current with industry trends and bring fresh ideas to the kitchen, contributing to menu evolution.

Staff Training and Development:

Assist in training new kitchen staff, ensuring they are proficient in The Chloe’s standards and procedures.
Conduct regular training sessions on cooking techniques, kitchen safety, and new menu items.
Support the professional growth of the culinary team, providing feedback and coaching to enhance their skills.

Operational Efficiency and Collaboration:

Coordinate with the front-of-house team to ensure smooth communication and timing between the kitchen and dining room.
Monitor prep work and ensure all stations are properly set up for service.
Step in to assist on any station as needed.

Control food costs by minimizing waste and optimizing ingredient usage.

Kitchen Cleanliness and Safety:

Uphold high standards of kitchen cleanliness and ensure compliance with food safety regulations.
Lead the team in maintaining a clean, organized, and safe work environment.

Team Development:

Support the growth and development of kitchen staff, ensuring they are equipped to deliver exceptional culinary experiences.
Promote a positive and productive work environment.

QUALIFICATIONS

Previous culinary experience in a full service kitchen (2+ years).

Ability to stand for long periods and lift up to 50lbs.
Manager safe food handling certified
