Full Job Description

Position Summary

The Kitchen Manager is responsible for overseeing the daily operations of a high-volume prepared foods kitchen within a specialty grocery store environment. This position requires a strong working manager who leads by example through active participation in daily food production while maintaining high standards of quality, organization, food safety, and operational efficiency.

The Kitchen Manager will oversee kitchen staff, streamline production processes, maintain production schedules, and ensure seamless communication between the kitchen, deli, and catering teams. The ideal candidate is an experienced culinary leader with strong organizational and coaching skills, a passion for high-quality prepared foods, and the ability to thrive in a fast-paced retail food environment.

Key Responsibilities

Kitchen Operations & Production

● Oversee daily kitchen operations and prepared foods production

● Set and manage daily production tasks for kitchen staff

● Review previous night closing prep lists to ensure accuracy, completion, and readiness for production

● Maintain organized and efficient production systems to support a high-volume prepared foods department

● Ensure the kitchen consistently operates at least one-half day ahead on production and prep

● Prepare and cook food daily as a primary working manager, spending the majority of time actively involved in production

● Maintain high standards for food quality, consistency, freshness, and presentation

● Streamline production procedures to improve efficiency, consistency, and workflow

● Ensure proper labeling, dating, rotation, storage, and handling of all prepared foods and ingredients

Culinary Leadership

● Lead and manage a kitchen team including cooks, cold salad/prep staff, and

dishwashers

● Train, coach, and develop kitchen staff on recipes, production standards, food safety,

and company procedures

● Monitor employee performance and maintain accountability for quality, cleanliness,

organization, and professionalism

● Ensure staff adherence to company policies, safety standards, and employee handbook

guidelines

● Foster a positive, productive, and team-oriented work environment

Inventory, Ordering & Administrative Responsibilities

● Assist with ordering, inventory management, and product usage control

● Monitor production levels and minimize waste through effective forecasting and planning

● Support scheduling, payroll administration, attendance tracking, sick time management,

and related administrative tasks

● Maintain accurate production records and operational documentation

● Assist in controlling labor and food cost goals

Deli & Catering Coordination

● Work closely with the Deli Manager and deli staff to ensure clear communication

regarding prep needs, production priorities, product rotation, and department standards

● Coordinate with the Catering Manager to ensure accurate and timely execution of

catering orders

● Serve as the primary liaison between catering operations and kitchen production staff

● Support seamless execution between kitchen, deli, and prepared foods operations

Food Safety & Compliance

● Ensure compliance with all food safety, sanitation, health department, and company

standards

● Maintain clean, organized, and safe kitchen and storage areas

● Monitor equipment usage and report maintenance or operational concerns promptly

● Ensure all staff follow proper sanitation and workplace safety procedures

Qualifications

● Previous kitchen management or culinary leadership experience required

● Experience in high-volume prepared foods, grocery, catering, or restaurant operations

preferred

● Strong culinary knowledge with experience preparing a wide variety of proteins, salads,

soups, and prepared foods

● Proven ability to lead, coach, and develop kitchen staff

● Strong organizational, communication, and multitasking skills

● Ability to work efficiently in a fast-paced environment while maintaining attention to detail

● Knowledge of food safety, sanitation, and inventory management practices

● Ability to work flexible schedules including opening, mid, closing, weekend, and holiday

shifts based on business needs

● Ability to stand for extended periods of 8-10 hours and lift/move products and equipment as required up to 50lbs

Must be SERV Safe Manager certified and hold current Allergens Certification (or be willing to gain certification within 30 days of date of hire.)

Position Expectations

The Kitchen Manager is expected to lead by example as an active working manager while maintaining high operational and culinary standards. This role is focused on executing and improving the company’s existing prepared foods program rather than developing new menus or changing the overall culinary direction.

Success in this position will come from maintaining consistency, improving food quality and production systems, supporting staff development, and ensuring strong communication and execution across kitchen, deli, and catering operations.
