About The Exchange

The Exchange is an upscale dining concept preparing to open with a focus on exceptional hospitality, thoughtful food and beverages, and a refined guest experience.

We are seeking an accomplished and hospitality-driven Beverage & Wine Director to join the leadership team during the pre-opening phase and help shape the identity of our bar and wine program from the ground up.

The Role

The Beverage & Wine Director will help build and shape The Exchange’s beverage program from the ground up, including wine, spirits, cocktails, beer, and non-alcoholic offerings. Working closely with culinary and restaurant leadership, this individual will develop an elevated, profitable program that complements the cuisine and defines our beverage culture. The ideal candidate is a knowledgeable, creative leader who is passionate about wine, craft cocktails, team development, and exceptional hospitality.

Key Responsibilities

· Build and launch The Exchange’s wine and beverage program from pre-opening through daily operations.

· Develop the wine list, spirits selection, cocktail program, and non-alcoholic offerings.

· Establish beverage standards, recipes, service procedures, and training systems.

· Partner with culinary leadership on pairings and overall beverage direction.

· Recruit, train, and develop the bar and service team.

· Manage beverage purchasing, vendor relationships, inventory, pricing, and cost controls.

· Maintain high standards for wine service, cocktail execution, presentation, and guest experience.

· Monitor beverage profitability and identify opportunities to improve performance.

· Stay current on wine, spirits, cocktail techniques, and industry trends.

· Ensure compliance with all responsible alcohol service and regulatory requirements.

Required Experience & Qualifications

· Candidates must have prior experience as a Beverage & Wine Director, Wine Director, Beverage Director, Bar Manager, or Lead Bartender.

· Required certification: Certified Sommelier or WSET Level 2 minimum.

· Advanced knowledge of wine, spirits, and fine-dining beverage service.

· Strong understanding of classic and contemporary craft cocktails.

· Experience with beverage purchasing, inventory, costing, pricing, and vendor management.

· Strong financial understanding of beverage margins, cost controls, and profitability.

· Experience training and developing bar and service teams.

· Strong leadership, communication, organization, and guest-service skills.

· Ability to build systems, standards, and processes in a pre-opening environment.

· Professional presence and a genuine passion for hospitality and beverage education.

$70,000–$80,000 annually, based on experience, plus performance-Based Bonus Plan

Pay: $70,000.00 - $80,000.00 per year
