Full Job Description

Position Summary:

The Banquet Chef is responsible for overseeing the Banquet kitchen staff and ensuring the quality of food items prepared are meeting each of the established Ocean Edge Resort & Golf Club standards. Duties also include hiring, training, appraising, and disciplining of team members.

Essential Functions:

· In conjunction with the Executive Chef and Director of F&B, create menus that consider ingredient availability, demand, production costs, health and wellness, and fit with each specific function or event.

· Ensures that food quality checks and safety regulations are being followed. Monitors daily temperature logs and cleaning schedules.

· Recruits, manages, and trains kitchen staff.

· Monitor Food and Labor Costs to ensure the kitchen is operating profitably

· Maintain proper inventory levels to avoid waste or spoilage

· Ensure kitchens operate smoothly during service, meets guests demands, adheres to all Ocean Edge Food Quality standards

· Participate in meetings with other Management Staff

· Scheduling of Culinary Team to ensure proper coverage for all operating areas is adequate while maintaining payroll costs versus budget

· Effectively communicates with Chefs regarding Guest Feedback, Planning and Forecasting of business levels, Menu Planning, Team Member stars and issues/challenges, and any other Resort information that pertains to the success of the Culinary Team.

· Collaborates with Marketing team to provide exceptional Culinary experiences for Resort Guests, Members, and Local customers.

· Create an environment at the Resort designed to stimulate all senses through personal services, amenities, and experiences provided by employees

· Create an environment for employees that is aligned with the company culture through constant communication and reinforcement

· Implement strategies for the kitchen that support the achievement of the Resort’s Goals

Skills and Qualifications:

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation.

· Thorough knowledge of hot and cold food preparation.

· Good working knowledge of accepted sanitation standards and Health codes for Massachusetts.

· Extensive skill in usage of kitchen equipment, i.e. slicers, mixers, food processors, stoves, steamers, grills, fryers, ovens, kettles, etc.

· Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.

· Ability to read, write and understand the English language to complete requisitions, read recipes and communicate with other employees and managers.

· Sufficient manual dexterity of hands to use all kitchen tools, i.e. knives, spoons, spatulas, tongs, etc.

· Ability to perform duties in confines spaces.

· Ability to perform duties within extreme temperature ranges.

· Food Safety certificate or ServSafe Certificate as required by Massachusetts State Health department regulations

· Five years’ experience or more as an Executive Chef in an luxury Hotel or Resort Food and Beverage Operation

· Degree from an internationally recognized culinary institution preferred
