Full Job Description

SOUS CHEF

A new and growing restaurant group based out of Cape Cod, seeks an enthusiastic and capable Sous Chef to join our culinary leadership team.

Our Sous Chef supports the Executive Chef and the entire team by organizing, planning and directing activities in all aspects of the kitchen and back of house.

Responsible for managing and assisting in preparing mise en place for all stations, expediting service, as well as staff scheduling, product ordering and inventory, and labor/cost control.

Responsibilities:

Responsible for following the recipes, methods of food preparation, plating, and in some cases service of all menu items per restaurant standards.
Performs additional tasks or responsibilities as requested by the Chef or General Manger
Must be able to work cleanly, efficiently, and with respect for quality ingredients and careful attention to preparation;
Perform maintenance and cleaning of the kitchen equipment as needed.
Ensure the cleanliness of equipment and work stations at the end of shift.
Must be able to operate effectively as part of a team, communicate clearly, and ensure smooth service operations and quality service.
Maintain inventory and production records.
Prepare all potentially hazardous foods at the correct temperature per HACCP guidelines;
Ensure food is stored and kept at proper holding temperature through the use and control reading of thermometers to ensure The Wicked Oyster and Health Department standards.

Self-starter who works independently and is highly self-motivated; goal oriented
Be experienced and confident manager and leader in the kitchen
Possess a professional image; with good interpersonal skills
Be able to motivate and mentor a culinary/kitchen team
Have ability to recruit, train, retain and manage a team of employees
Be resourceful, service minded and (guest and employee) focused each day
Have strong organizational skills
Be ServSafe Certified
Excels in a fast paced environment
Energetic, proactive, innovative and flexible
Exceptional problem solving skills
Honest, ethical, and dependable
Possess a professional image; with good interpersonal skills

The ideal candidate:

3-5 years’ culinary experience in restaurants, preferably of similar caliber.
Someone who possesses strong leadership skills, extremely detail oriented, and incredible interpersonal skills.
Culinary Certification Preferred
Experience with new restaurant openings, or a good idea of what it takes to do so is a must.
Be experienced and confident manager and leader in the kitchen
