Full Job Description

Job Overview
We are seeking an experienced, polished, and motivated Sous Chef to join our upscale Latin-Peruvian fine dining concept. The ideal candidate will support the Executive Chef in leading daily kitchen operations, maintaining high food quality, and ensuring consistency across all dishes. This role requires strong culinary skill, leadership ability, attention to detail, and experience in a high-quality restaurant environment. Knowledge of Peruvian cuisine, Latin flavors, seafood, ceviches, grilled proteins, sauces, and fine dining presentation is strongly preferred.

Responsibilities
Assist the Executive Chef with daily kitchen operations, prep management, and service execution.
Supervise line cooks, prep cooks, dish staff, and other kitchen team members during shifts.
Ensure all dishes are prepared to the restaurant’s recipes, plating standards, and quality expectations.
Support execution of Latin-Peruvian dishes, ceviches, seafood, meats, sauces, sides, and specialty menu items.
Maintain high standards of food presentation, portion control, freshness, and consistency.
Help with menu development, daily specials, recipe testing, and creative Peruvian-inspired offerings.
Oversee food handling, storage, labeling, rotation, and sanitation procedures.
Monitor inventory levels and assist with ordering, receiving, and stock organization.
Ensure the kitchen follows all health department, food safety, and sanitation guidelines.
Train, coach, and support kitchen staff to maintain a professional and efficient work environment.
Assist with scheduling, prep lists, station setup, opening duties, closing duties, and kitchen workflow.
Communicate clearly with the Executive Chef, management, front-of-house team, and kitchen staff.
Maintain cleanliness, organization, and professionalism throughout all kitchen areas.
Lead the kitchen during service when the Executive Chef is unavailable.
Help resolve kitchen issues quickly while maintaining calm, leadership, and high standards.

Experience & Qualifications
Previous Sous Chef or kitchen leadership experience is required.
Must have at least 2–3 years of culinary experience, preferably in fine dining, upscale restaurants, Latin restaurants, Peruvian restaurants, seafood concepts, or high-quality hospitality environments.
Must have strong knowledge of kitchen operations, prep systems, cooking techniques, food safety, and service execution.
Experience with Peruvian cuisine, Latin cuisine, ceviches, seafood, sauces, grilled meats, and elevated plating is strongly preferred.
Must be able to lead, train, and motivate kitchen staff in a fast-paced environment.
Strong organizational skills and ability to manage prep, inventory, ordering, and kitchen workflow.
Must maintain high standards of cleanliness, consistency, presentation, and professionalism.
Ability to work under pressure while maintaining quality and attention to detail.
Must be reliable, punctual, team-oriented, and able to communicate effectively.
Culinary degree or formal culinary training is a plus but not required.
Must be able to work nights, weekends, holidays, and special events as needed.
