Job Overview

Coastal Crust is seeking a Catering Truck Manager / Sous Chef to lead the culinary execution and day-to-day operations of our unique antique pizza truck catering program. This is a hands-on leadership role for an experienced hospitality professional who thrives in fast-paced environments, takes pride in exceptional food and service, and enjoys creating memorable experiences for private events and weddings.

Our vintage pizza trucks date back to the 1950s and bring a one-of-a-kind experience to events throughout the Charleston area. The Catering Truck Manager will work closely with our Event Coordinator and culinary leadership to plan, prepare, transport, set up, and execute events from start to finish.

This position offers an exciting opportunity for someone who wants ownership of their craft and enjoys combining culinary leadership, event management, hospitality, and hands-on cooking.

Responsibilities

Work closely with the Head Chef, General Manager, and Event Coordinator to execute catering events at the highest standards.
Take full ownership of the culinary execution and on-site operation of our antique pizza trucks.
Prepare, cook, and present food for private events, weddings, corporate functions, and other large-scale gatherings.
Coordinate event preparation, including ordering and organizing food, beverages, beer/wine, equipment, and other necessary materials.
Maintain accurate inventory and minimize food waste while ensuring all event needs are met.
Safely transport, set up, operate, and break down the catering trucks and event equipment.
Drive catering trucks to and from scheduled events and ensure they are properly maintained, stocked, clean, and event-ready.
Lead and supervise event staff, delegating responsibilities and ensuring smooth service from setup through breakdown.
Train and coach team members in food preparation, food safety, hospitality, and service standards.
Ensure all food preparation, storage, transportation, and service comply with food safety and health regulations.
Maintain exceptional food quality, consistency, presentation, and portion control.
Communicate directly with the Event Coordinator, clients, vendors, and team members to ensure successful event execution.
Manage POS systems, cash handling, and sales reconciliation when required.
Assist with scheduling, staffing, interviewing, and team development as the catering operation grows.
Monitor event costs, product usage, and profitability while identifying opportunities to improve efficiency and revenue.
Maintain a positive, professional, solutions-oriented attitude, particularly during high-pressure events.
Represent Coastal Crust with professionalism and enthusiasm at every event.

What We're Looking For

Proven experience in the food and beverage, catering, restaurant, or hospitality industry.
Previous experience as a sous chef, kitchen manager, chef, catering manager, or similar leadership position.
Strong culinary skills with hands-on food preparation and cooking experience.
Experience leading a team in a fast-paced kitchen or event environment.
Excellent organizational skills and attention to detail.
Strong communication and interpersonal skills.
Knowledge of food safety practices, proper food handling, and health regulations.
Experience with inventory management, ordering, food production, and controlling waste.
Familiarity with POS systems such as Toast is a plus.
Basic math skills and the ability to understand food costs and event profitability.
Catering, banquet, wedding, or large-event experience is strongly preferred.
Ability to work evenings, weekends, holidays, and varying event schedules as required.
Valid driver's license and reliable transportation to and from work are required.
Ability to safely and confidently drive and operate our vintage catering trucks.
Ability to lift, carry, stand for extended periods, and work outdoors in varying weather conditions.
A positive attitude and genuine passion for hospitality are a must.
