Experienced Neapolitan Pizzaiolo – Wood-Fired Oven

Sapori Napoletani | Chicago, IL 60634

Sapori Napoletani is seeking an experienced Neapolitan Pizzaiolo / Wood-Fired Pizza Maker to join our growing culinary team.

Professional experience working with a wood-burning pizza oven is required. We are specifically looking for a pizzaiolo who understands how to manage a live wood fire, control oven temperature, work with Neapolitan dough, and consistently execute pizza in a high-temperature wood-fired oven.

This is not an entry-level pizza position. Candidates should already be comfortable working a wood-burning oven during active restaurant service.

Responsibilities

Operate and manage a wood-burning Neapolitan pizza oven
Build, maintain, and control a live wood fire throughout service
Understand heat management, oven floor temperature, flame positioning, and recovery during volume
Hand stretch and shape Neapolitan pizza dough
Properly top, launch, turn, bake, and finish pizzas
Produce consistent Neapolitan pizzas during high-volume service
Understand proper dough handling, proofing, fermentation, and storage
Recognize and adjust for changes in dough temperature and condition
Maintain proper pizza station mise en place and pars
Follow established recipes, portions, and presentation standards
Maintain a clean, organized, and sanitary pizza station and oven area
Assist with opening, prep, closing, and station organization
Communicate effectively with the kitchen and management team

Qualifications

Previous professional wood-burning pizza oven experience required
Neapolitan pizza experience strongly preferred
Strong experience hand stretching pizza dough
Ability to independently manage a wood fire and high-temperature oven
Understanding of Neapolitan dough and fermentation
Ability to execute consistently during high-volume service
Strong organization and cleanliness
Dependable, punctual, and team-oriented
Available for nights and weekends

Full-time and part-time opportunities available.
