Full Job Description

Description: The School Chef ~ Food & Nutrition Specialist is responsible for the preparation, cooking and serving students and faculty, working within Safe Food Handling practices, Health Department guidelines, with the aim of providing creative, nutritional, scratch made foods with high standards and good quality at a low cost.

Responsibilities:

To prepare, cook and serve scratch-made foods to meet the need defined by the school, including meeting the meal requirements of the faculty and students and any special emergency and function catering.
Knowledgeable and exceeds USDA guidelines for nutrition.
To create nutritionally balanced and creative food menus, including a daily lunch and two daily snacks.
Order food supplies and monitor, organize, and maintain appropriate stock levels, including records of stock taking and inventory.
Knowledge of various methods of preparing, producing, cooking, heating, baking, and serving large quantities of a variety of fresh, scratch-made food.
Ensures foods taste great, are visually diverse and appealing.
Practices all statutory requirements and safe food handling according to Hazardous Analysis Critical Control Point (HACCP) and the DuPage County Health Department.
To maintain a thoroughly clean and sanitary kitchen to meet the school expectations; through daily cleaning and deep cleaning kitchen equipment, and washing and sterilizing of all dishes, pots, pans, silverware, and utensils. Weekly and monthly deep cleaning of the kitchen, staff lounge areas, and all kitchen equipment such as counters, tables, ovens, refrigerators, freezers, and mixers.
Maintain health and safety logbooks.
Promote effective waste management through composting in a zero-waste kitchen. Monitoring, and ensuring reduction and management of food waste in a zero-waste kitchen.
Operate kitchen equipment such as, but not limited to, electric mixers, ovens, and stove tops.
Utilizes kitchenware such as, but not limited to, knives, spatulas, whisks, tongs, spoons, and ladles.
Maintain relationships with food vendors and purveyors.
Enhance student growth in the classroom with nutrition and food related activities.
Participate in ongoing professional development training.
Research new trends, recipes, and early childhood food initiatives to maintain best practices within the school’s food program.
Present at an annual Curriculum Night, as well as other school functions as needed, including demonstrations and food tasting sessions.
Assist the Nature Curriculum Specialist in planning and overseeing the chef's garden.
Is an integral member of the school’s Nature, Gardening, and Sustainability Committee.
Maintain positive and supportive relationships with the school, faculty, students, and families.
Be an ambassador of Fia Mia Academy both in the school and within the community.

Minimum Requirements:

Must hold a valid food sanitation license/ANSI Approved Illinois Food Manager Certification, Allergen Training and Food Handler Certification.
Hold in undergraduate degree in culinary arts or similar.
Minimum of two years kitchen experience.
Knowledgeable about early childhood food nutrition and the importance of organic foods.
Have cooking experience and enjoys working with young children.
Has excellent organizational and communication skills, along with a great sense of humor.
Basic technology skills.
Must pass State and Federal background check.
Willingness to take professional development classes.
Able to identify and resolve problems in a timely manner.
Able to maintain confidentiality.
Ability to prioritize and plan work activities and use time efficiently.
Ability to follow instructions and respond to supervisor direction and take responsibility for own actions.
Ability to exhibit objectivity and openness to others’ views. Gives and welcomes feedback to contribute to building a positive team spirit. Puts success of team above own interests, builds morale and group commitments to goals and objectives and support everyone's effort to succeed.
Support the schools code of ethical conduct.
Prepare and provide timely and accurate written reports, memoranda, and other statistical and narrative information as required or requested.
Maintain a healthy lifestyle.
Have a current (No older than six months prior to hire) physical examination and TB test in addition to having a background check clearance performed.
Ability to hear the conversational voice, with or without a hearing aid, the ability to see and read newsprint with or without corrective lenses, to speak and be understood using clear communication.
Ability to life and carry children and other items weighing up to 50 pounds; and the use of hands, arms, legs, and feet with or without corrective services to accomplish the job, including evacuation of children from the school building during emergencies.
