What this role is

The Grill Cook runs the char-broiler — the station responsible for burgers, steaks, salmon, and any other direct-flame items on the menu. At Taggart’s, that includes the house-made gourmet burgers that go on scratch-made buns. This is a precision station: proteins cooked to order, temperature accuracy matters, and the ticket flow during a Saturday push is unforgiving. The right person here takes pride in the quality of every plate that leaves their station.

Reports to

Kitchen Manager. On-floor direction during service from the Window (Lead Cook).

Schedule and physical reality

Schedule: We operate on Tuesdays through Sundays, Closed Mondays. Shifts range in length from 5.5 hours to 10 hours. Weekly schedules may vary.

Physical demands: Standing for the full shift on a hard floor. Direct, sustained exposure to heat from the char-broiler — higher heat than most stations on the line. Frequent lifting of supply cases and raw protein up to 50 lbs. Quick pivoting, reaching over an open flame, and managing multiple proteins simultaneously under time pressure. Burns are an occupational reality; proper technique significantly reduces risk.

Environment: The hottest station in a hot kitchen. Peak service is loud, fast, and physically demanding.

What you do

During prep (before service): - Set up and pre-heat the grill to proper temp before service begins - Stock station to ensure readiness for service - Season and stage proteins at station in correct order for service flow - Stock all necessary tools: tongs, spatulas, meat thermometer, timers, holding pans, gloves - Review specials and any station-specific modifications for the day

During service: - Cook all grill items to order at correct internal temperature and to recipe spec - Manage multiple proteins in different stages simultaneously — a Saturday night push may have 10–15 items on the grill at once - Communicate timing with window: call out when items are coming off, flag any delays before they affect the ticket - Monitor grill temperature and adjust throughout service; notify Kitchen Manager if equipment is not performing correctly - Maintain station cleanliness throughout service

Post-service / closing: - Clean and scrape grill surface per closing procedure - Break down station, wrap and label proteins, date and store correctly per food safety standards - Complete closing checklist and initial

What good looks like

Every protein leaves the station cooked correctly to the ticket spec — no over, no under, no guessing. Timing is tight: the grill station and the fry station hit expo together, not five minutes apart. The station is managed proactively: if a modification on a ticket changes the timing, expo knows before the ticket is due. Waste is minimal — portions are accurate and product is rotated properly.

Qualifications

Required: - Ability to perform in sustained high-heat conditions for the duration of a full shift - Basic knife and prep skills - Comfort handling raw proteins, including portioning and basic butchery tasks as needed - Reliability — grill is not a station that can go uncovered - Food handler certification obtained within 14 days from onboarding.

Preferred: - Prior grill station or broiler experience - Familiarity with temp-to-order cooking and meat thermometer use - Experience in a scratch or from-scratch kitchen environment

Not required: Formal culinary training. We will train the right person who can handle the heat and the pace.

Compensation

Starting Hourly Rate: $16 - $24 / hour Depending on Experience, with a 90 Day Review. Annual merit increases available based on performance.

Pay: $16.00 - $24.00 per hour

Expected hours: 24.0 – 40.0 per week
