Pastry Line Cook – Marble Room Steaks & Raw Bar
Location: Marble Room, 623 Euclid Avenue, Cleveland, OH (Historic Garfield Building)
Reports to: Executive Chef / Pastry Chef
Employment Type: Full-time

Position Overview

Marble Room is seeking a skilled and detail-oriented Pastry Line Cook to join our culinary team. This role focuses primarily on the precise plating and presentation of desserts during service in a high-volume, fine-dining environment. The ideal candidate takes pride in consistency, speed, and visual excellence while supporting the pastry program and overall guest experience.

Key Responsibilities

Plate and present all desserts during service according to established recipes, plating guides, and presentation standards
Maintain mise en place, station organization, and readiness throughout service
Ensure consistent portioning, temperature, texture, and visual quality of every dessert leaving the station
Assist with basic pastry production and prep as needed (sauces, garnishes, components, ice cream/gelato handling, etc.)
Communicate effectively with the expo, servers, and kitchen team to coordinate timing and special requests
Uphold cleanliness, sanitation, and food-safety standards (including proper labeling, dating, and FIFO)
Monitor and manage product quality and waste; alert leadership to low inventory or quality issues
Support special events, private dining, and high-volume periods as required
Contribute to a positive, professional, and collaborative kitchen culture

Qualifications

Previous experience in a fine-dining or high-volume restaurant pastry or dessert station preferred
Strong plating skills and attention to detail under pressure
Ability to work efficiently and calmly during busy service periods
Solid understanding of dessert components, temperatures, and presentation standards
Basic knowledge of pastry techniques and production helpful
Reliable, punctual, and team-oriented
Ability to stand for long periods and work in a fast-paced kitchen environment
Food handler’s certification or willingness to obtain
Flexibility to work evenings, weekends, and holidays as required by restaurant operations
