Full Job Description

POSITION: Sous Chef

REPORTS TO: Executive Chef Gahanna

SUMMARY
The sous chef is responsible for supporting the executive chef in all culinary activities and ensuring the kitchen operates in an
efficient manner while maintaining our quality standards. The responsibilities of this position include but are not limited to:
providing a strong leadership presence, assisting in seasonal menu creation and designing new dishes, labor management, training personnel, product purchasing, inventory systems management, and communication of company policies and procedures.

ESSENTIAL FUNCTIONS AND RESPONSIBILITIES
1. Responsible for quality food preparation and service; food appearance; cleanliness and sanitation of production and service areas, equipment and employee appearance.
2. Assisting in all training activities for the kitchen and back of house operations as well as assisting in the menu education for service employees.
3. Create and maintain schedules for the kitchen staff bi‐weekly with a focus on labor resource management and speed of service.
4. Performing regular inventory counts for the purpose of tracking and ordering inventory as needed.
5. Ability to accurately and quickly problem solve common and emergency situations as they arise to ensure that the kitchen consistently operates in an efficient manner.
6. Capable and confident leader that is able to provide a calm, positive leadership presence at all times.
7. Must have a passion for continual culinary and leadership development.

SUPERVISORY RESPONSIBILITY
This position is required to assist in the supervision, interviewing, training and recruitment of a talented back of house staff and must be the point of leadership in the kitchen when the Executive Chef and Executive Sous Chef are not on site.

WORK ENVIRONMENT
The work environment can be loud and busy. There are many kitchen hazards such as hot surfaces and liquids, sharp knives, and slippery floors.

PHYSICAL DEMANDS
The employee is required to stand for long periods as well as walk, bend and stoop. The position requires working taste buds, ability to smell, feel with fingers and visually inspect, including close and distance vision. The position requires ability to use arms, hands and manipulate fingers to reach, stir, measure, pour, cut, chop, dice, decorate, etc.

POSITION TYPE/EXPECTED HOURS OF WORK
This position regularly requires on site presence and weekend work.
