Overnight Baker – The Salty

Who We Are
The Salty is an artisan donut shop known for chef-made, seasonal donuts, crafted in-house with only the highest quality ingredients — no artificial stuff, ever. We also serve Intelligentsia Coffee. But what truly sets us apart is our obsession with guest service: creating a warm, consistent experience for every guest, every time.

The Role
Our Overnight Bakers are the heartbeat of our kitchen through the night, setting the pace for a great shift before the sun even comes up. As an Overnight Baker, you'll cut, proof, and fry the dough that becomes our fresh donuts each morning — working through the night so our guests wake up to something amazing. You'll go through hands-on training with our Pastry Chef to build real product knowledge and confidence handling whatever the night throws at you.

What You'll Do

Cut, proof, and fry dough per the Pastry Chef's nightly production numbers
Visually check quality before and after frying
Track counts throughout the shift to keep numbers accurate
Communicate with kitchen leads to troubleshoot quality or production issues
Keep work areas — tables, shelves, equipment, floors — clean and ready
Report any equipment issues to the Executive Pastry Chef right away
Complete cleaning checklists at set times during the shift

About You

Comfortable working overnight shifts, including weekends and holidays
Reliable transportation and strong punctuality
Able to stand up to 10 hours and lift up to 50 lbs
Comfortable with physical, repetitive work
Solid basic math skills
Fluent in English
A detail-oriented team player who can also work independently
Dough experience is a plus, but not required — we'll train you!
