Full Job Description

Own the overnight bake. You are the last set of eyes on every loaf that reaches the case at a bakery that mills its own grain.

Schedule: Overnight, approximately 8:00 p.m. to 4:30 a.m., five shifts per week including weekend rotation. The case is stocked by 6 a.m., 365 days a year.

ABOUT ELLER

Eller is a European style bakery, flour mill, and specialty coffee roastery on the Westside of Costa Mesa. We mill our own flour fresh on a 60 inch granite stone mill built by New American Stone Mills in Vermont, the same mills run by some of the most respected milling bakeries in the country. We bake naturally leavened sourdough with ancient and heritage grains, alongside beautiful flours sourced from farmers and craft mills around the country, and we laminate with imported butter, often French or Amish. Our ingredients are organic and pasture raised wherever it matters.

The space matches the standard. You will work in a stunning retail bakery built around custom French white oak baker's carts, with MIWE deck ovens, a double rack roll-in oven, a MIWE proofer retarder, and Rondo dough equipment. A craft kitchen runs right alongside the bake floor, so bakers collaborate daily with our chef partner and culinary team. Our on site coffee roastery and full beverage bar round out the program. The cafe serves Costa Mesa every single day of the year and our wholesale program is growing fast. This is one of very few bakeries west of the Rockies where you can work this close to the grain.

THE ROLE

You run the bake. You lead a small overnight and early morning crew, manage the oven schedule, and are the last set of eyes on every loaf and pastry that goes to the case. You keep the shift moving without sacrificing the standard.

WHAT YOU WILL DO

- Lead 2 to 4 bakers through the overnight and morning bake

- Own oven management, bake order, and dough scheduling

- Make the call on proof readiness and bake quality

- Handle shift handoffs, production notes, and case counts

- Coach newer bakers on shaping, scoring, and lamination

WHAT YOU BRING

- 3+ years professional baking, artisan bread or viennoiserie preferred

- Experience running a shift or acting as the senior baker on a crew

- Strong judgment on fermentation and bake color

- Reliability. The bake starts on time because you do

WHAT WE OFFER

- $26.00 to $30.00 per hour depending on experience
