Full Job Description

Quality Assurance Supervisor

Company: Mockingbird Food Group LLC

Location: 2520 Weir Street, Dallas, TX (on-site)

Reports to: Director, Food Safety & Quality Assurance (FSQA)

Direct reports: 3–4 QA Technicians

Shift: Production shift, with coverage flexed across shifts as needed (including 6th-day peak weeks)

Position Summary

The QA Supervisor leads the day-to-day execution of Mockingbird's food safety and quality program on the floor, supervising a team of 3–4 QA technicians and serving as the bridge between the Director of FSQA and the production lines. This role owns whether product made each day meets customer specs, food-safety requirements, and GFSI standards — and whether the records prove it.

Mockingbird co-packs refrigerated and frozen ready-to-eat products for national CPG brands and retailers under strict lot, allergen, and food-safety controls. The QA Supervisor makes the real-time hold/release and disposition calls, keeps the technician team accurate and consistent across lines and shifts, and keeps the plant audit-ready every day, not just before an audit.

Key Responsibilities

Team Leadership

Supervise, schedule, and develop a team of 3–4 QA technicians; ensure quality coverage across all running lines and shifts.
Train technicians on inspection methods, sampling, documentation, and decision criteria; drive consistency line to line and shift to shift.
Review technician work and records; coach for accuracy and timeliness.

Food Safety & HACCP Execution

Verify execution of the HACCP / food safety plan, including CCP monitoring, corrective actions, and verification records.
Oversee the Environmental Monitoring Program (Zones 1–4; Listeria/Salmonella) — sampling, trending, and corrective action.
Enforce the allergen control program: changeover verification, segregation, and label control.
Verify SSOP and GMP compliance through pre-op and in-process checks.

In-Process Quality & Product Disposition

Oversee pre-operational, in-process, and finished-goods quality checks (weights, seals, coding/dating, labeling, temperature, organoleptic).
Make hold/release and disposition decisions; manage nonconforming product and rework.
Verify product meets customer specifications before release; manage spec governance with the FSQA Director.

Documentation, Traceability & CAPA

Review and verify production and quality records for completeness and accuracy.
Manage nonconformances, corrective/preventive actions (CAPA), and root-cause investigations.
Support lot traceability and mock recall exercises; ensure traceability holds on every transaction.
Maintain the calibration program for quality instruments.

Supplier, Customer & Compliance

Review incoming material quality and supplier COAs; manage receiving-side quality holds.
Support customer complaint investigation and response.
Maintain readiness for internal, customer, and third-party GFSI (SQF / BRC) audits; conduct internal audits and drive closure of findings.
Ensure compliance with USDA, FDA, and Texas DSHS requirements.

Required Qualifications

3–5+ years of QA experience in food or beverage manufacturing, including supervisory or lead experience over QA staff.
Working knowledge of HACCP, GMPs, SSOPs, allergen control, and environmental monitoring — and the records that support them.
Familiarity with GFSI schemes (SQF or BRC) and audit expectations.
Demonstrated ability to make sound, defensible hold/release and disposition decisions under production pressure.
Strong documentation discipline and attention to detail.
Ability to work the production shift and flex coverage across shifts, including peak-week sixth days.
Physically able to work in a refrigerated/frozen plant environment; stand and move throughout the plant for a full shift; lift up to 50 lbs.

Preferred Qualifications

HACCP certification; SQF or BRC practitioner certification.
PCQI (Preventive Controls Qualified Individual).
Experience in a refrigerated, frozen, MAP, or ready-to-eat co-packing or CPG environment.
Bilingual English/Spanish — strongly preferred for leading floor QA and training technicians and operators in both languages.
Experience with QMS / ERP / digital quality documentation systems.
Internal auditor training.

Work Environment

Refrigerated and frozen food manufacturing plant. Time split between the production floor, QA lab/bench, and documentation. Exposure to cold temperatures, moisture, noise, moving equipment, and cleaning chemicals. PPE required at all times. Fast-paced, schedule-driven environment.
