Job Summary

The Kitchen Compliance Lead Cook is responsible for leading daily kitchen production while maintaining the highest standards of food safety, sanitation, quality assurance, and operational compliance within a fast-paced ghost kitchen environment. This role combines hands-on food production with oversight of HACCP procedures, temperature logs, labeling systems, sanitation practices, and recipe execution to ensure all food is prepared safely, consistently, and in compliance with company and regulatory standards.

The ideal candidate is highly organized, detail-oriented, and capable of leading by example while ensuring speed, consistency, and accountability across kitchen operations

WHAT YOU WILL DO:

Food Production & Execution

Prepare and cook menu items according to standardized recipes and production specifications
Maintain consistency, portion control, and presentation standards across all menu items
Execute high-volume production efficiently while maintaining food quality standards
Monitor ticket times and production flow to support operational efficiency
Assist with prep production, station setup, and line execution as needed
Ensure all food is properly stored, rotated, labeled, and handled according to food safety standards

Kitchen Leadership & Team Support

Lead kitchen staff by example through professionalism, urgency, and accountability
Support training and coaching of cooks and prep staff on food safety procedures and operational standards
Assist with onboarding new kitchen employees on sanitation and compliance expectations
Communicate production needs, shortages, and operational concerns to management
Help maintain a positive, organized, and team-oriented kitchen culture

Sanitation & Organization

Maintain a clean and organized kitchen environment at all times
Ensure workstations, prep areas, storage areas, and equipment meet sanitation standards
Monitor cleaning schedules and verify completion of assigned cleaning tasks
Ensure proper chemical handling and storage procedures are followed
Support end-of-day cleaning and kitchen closing procedure

Previous experience in high-volume kitchen, commissary, ghost kitchen, or production cooking environment preferred
Current ServSafe Certification required
Strong understanding of ServSafe, state, and local food safety and sanitation regulations

Experience with HACCP procedures and kitchen compliance documentation preferred
Strong organizational skills and attention to detail
Ability to work efficiently in a fast-paced environment
Reliable attendance and punctuality
Ability to stand for extended periods and lift up to 50 lbs
Strong communication and leadership abilities

Preferred Skills

Experience leading kitchen teams or shifts
Familiarity with delivery-focused kitchen operations
Understanding of inventory rotation and product quality control
Ability to multitask while maintaining accuracy and compliance
Strong sense of urgency without sacrificing food safety standards

Work Environment

Fast-paced ghost kitchen / production kitchen environment
Exposure to hot surfaces, kitchen equipment, and refrigeration areas
Requires standing, bending, lifting, and repetitive motion throughout shifts
Weekend, evening, and holiday availability may be required based on business needs
