Job Summary

We are seeking a dynamic and experienced Lead Line Cook to join our culinary team! In this vital role, you will oversee daily kitchen operations, ensuring the highest standards of food quality, safety, and presentation. Your leadership will inspire the team to deliver exceptional dining experiences, especially in fast-paced, high-volume environments. Duties

Lead and maintain consistency and adherence to recipes and presentation standards
Supervise line cooks and kitchen staff, providing guidance on food preparation, cooking techniques, and food safety protocols
Cook online and read and call tickets from the line coordinating with the chef/expeditor to drive the kitchen and maintain pace and quality. Oversee food production processes including grilling, braising, poaching, and other cooking methods to ensure timely delivery of orders
Operate and maintain kitchen equipment safely and efficiently, including knives, grills, ovens, and food prep tools
Ensure compliance with food safety sanitizing procedures and food handling regulations at all times
Assist with menu planning by suggesting new dishes or modifications based on ingredient availability and customer preferences
Monitor inventory levels of ingredients and supplies; coordinate with purchasing to ensure stock availability for high-volume production
Uphold cleanliness standards in the kitchen through regular sanitizing routines and organization of workstations

Qualifications

Proven experience in food service or restaurant environments with a focus on high-volume production, solid under pressure maintaining quality
Strong culinary skills including proficiency in grilling, braising, poaching, and other cooking techniques
Excellent knife skills and knowledge of food safety management practices
Prior dietary aide or dietary department experience is a plus, especially in fine dining or catering settings
Familiarity with menu planning, recipe adherence, and food production processes
Ability to operate kitchen equipment safely and efficiently under pressure
Experience with food safety sanitizing procedures and maintaining hygiene standards in busy kitchens
Demonstrated leadership skills with the ability to motivate team members and manage workflow effectively. Spanish speaking or bilingual a major plus
