Full Job Description

Job Summary
The Shores of Fox Lake is a casual to fine dining establishment focused on high-quality ingredients, thoughtful execution, and an exceptional guest experience. We are seeking a qualified and motivated Head Chef to lead our culinary operations. This role is responsible for overseeing all kitchen activities while maintaining the highest standards of food quality, consistency, cleanliness, cost control, and safety. The ideal candidate is a hands-on leader who is both creative and operationally disciplined.

Responsibilities

Oversee and manage all kitchen operations
Develop, execute and maintain established menus, recipes, and signature dishes to ensure consistency
Collaborate with ownership and management on menu updates while honoring The Shores’ standards and style
Ensure exceptional food quality, presentation, and consistency at all times
Deliver dishes that enhance overall guest satisfaction
Manage and lead kitchen staff
Hire, train, schedule, and evaluate kitchen employees
Organize and supervise kitchen shifts using the Sling scheduling app
Maintain a clean, organized, and efficient kitchen environment
Ensure compliance with all health, safety, and sanitation regulations
Estimate food consumption, forecast needs, and manage ordering
Track inventory, food costs, and waste using Toast POS with the built-in xtraCHEF module
Control food and labor costs while minimizing waste
Manage vendor relationships and product quality
Nurture a positive, professional, and team-oriented kitchen culture
Collaborate with ownership and management on menu planning, special events, and operational improvements
Implement innovative strategies to improve efficiency, consistency, and profitability

Experience

Proven experience in kitchen management, food preparation, and food service; at least 3 years
Strong leadership, organization, and communication skills
Solid understanding of food costing, inventory management, and kitchen profitability
Experience with modern restaurant technology (Toast/xtraCHEF experience a plus)
Ability to thrive in a fast-paced, high-expectation kitchen environment
Flexible schedule – must be available nights, weekends, and some holidays
Passion for hospitality, teamwork, and continuous improvement
2–3 professional references required
Culinary degree or relevant certification is a plus
