POSITION TITLE: Wok Specialist

JOB SUMMARY:
Prepare all food orders in a quick and timely manner in accordance with established recipes.
JOB ESSENTIAL DUTIES AND RESPONSIBILITIES:
Ø Establish and endorse the business objectives, ethics, and values of Caesars Entertainment in accordance with the Code of Commitment and Mission, Vision and Values
Ø Responsible for fast and clean servicing of all menu items to the servers
Ø Responsible for preparing other various food products Ensuring the quality and presentation of food products prepared
Ø Performing all station functions necessary in the prep and cooking areas
Ø Providing the highest quality of service to customers and associates at all times
Ø Prepare, cook, and season all food
Ø Ensure the quality and presentation of food products prepared
Ø Able to prepare and serve menu items in front of guests
Ø Ensure each order sent out is uniform and consistent
Ø Adhere to kitchen maintenance and sanitation program
Ø Control food production to include proper cooking methods, cooking time and temperature and ensuring sanitation, handling, and storage of prepared food
Ø Prepare for rush period of work without getting behind organizing workday to accommodate needs
Ø Check workstation and maintain the general cleanliness of the various cook stations throughout kitchen
Ø Keep stock on hand and organizes orders
Ø Protect all company assets in regard to waste, breakage, and theft
Ø Maintain orders for preparation needed and ordered to meet the day’s production needs
Ø Fill special orders when customers request it
Ø Keep errors to a minimum
Ø Knowledgeable about Harrah’s facilities, promotions, and services
Ø Complete a task, even if overtime is involved
Ø Display and arrange visual presentation of products in trays and cases
Ø Apply proper cutting techniques, piece count, packaging, and labeling standards
Ø Ensure all deliveries to satellite locations are being made according to standards and in a timely fashion
Ø Ensure all food safety guidelines and procedures are being followed as outlined in HAACP Plans and SOP’s
Ø Understand local sanitation, health code laws, and weights and measures requirements
Ø Ensure all required logbooks, including rice pH log and temperature logs, are maintained, and verified
Ø Receive and examine inventory and supplies to ensure quality and quantity meet established standards and specifications
Ø Properly maintain and store company inventory including utensils, cookware, and machinery
Ø Share equipment with co-workers
Ø Calibrate pH meters and thermometers
Ø Monitor production volume on a daily and weekly basis
Ø Abide by appearance standards
Ø Complete daily shift checklist that is verified by leader before leaving
Ø Perform any other duties as requested by shift leader
Ø Adhere to regulatory, departmental, and company policies/procedures in an ethical manner
MINIMUM QUALIFICATIONS:
Ø High school diploma or GED preferred
Ø Six months cooking experience required
Ø One-year cooking experience outside casino preferred
Ø Successful completion of Level II testing required
Ø ServSafe certified, knowledge of HAACP Standards required
Ø Must demonstrate the following essential knowledge and skills:
Ø Knowledge of kitchen sanitation standards and procedures
Ø Basic knowledge of food preparation techniques and presentation
Ø Excellent interpersonal skills
Ø Able to operate and maintain the following kitchen equipment: stoves, grills, fryers, Maki Machine other basic equipment and other utensils when preparing food orders
Ø Dexterity to use knives and other hand-held instruments, as well as food preparation equipment required
Ø Problem-solving abilities with the ability to quickly perform mathematical computations
Ø Neat, professional appearance with excellent personal hygiene
PHYSICAL, MENTAL, AND ENVIRONMENTAL DEMANDS:
Ø Must be able to attend to multiple priorities simultaneously
Ø Must be able to be on feet for 8-hour shifts
Ø Must be able to lift and carry up to 50 pounds and be able to push and pull up to 300 pounds in a cart
Ø Must be able to stoop, bend, reach, kneel and twist items
Ø Must be physically mobile with reasonable accommodation
Ø Must be able to have exposure to extreme heat or cold temperatures
Ø Must be able to respond to visual and aural cues
Ø Must be able to read, write, speak, and understand English
Ø Must be able to handle high stress in the work environment and turn stress into high energy
Ø Must be able to tolerate areas containing varying noise and temperature levels, illumination, vibrations, crowds, and air quality including secondhand smoke
Ø Must be able to work a flexible schedule including weekends, evenings, and holidays
