Executive Sous Chef

Job Title: Executive Sous Chef

Department: Culinary

FLSA: Exempt

Status: Full Time

Reports to: Executive Chef

Customary Hours: 40 hours per week; varies to include evenings, weekends, holidays, and extended hours as business requires

Purpose of Position:

The purpose of the Executive Sous Chef position is to meet Simply Fresh Events’ long-term vision and growth needs, through the management and execution of SOPs and the development of our culinary staff.

Position Responsibilities:

General:

Work with Executive chef to manage kitchen work flow and schedules for kitchen staff. Oversee kitchen team daily operations. Plan and execute weekly kitchen production schedule. Manage ordering for all food and beverage products in a timely and economical manner. Inventory control and maintenance for disaster/emergency catering. Create menu plan in advance of a disaster catering events. Maintain cleaning and maintenance logs of kitchen equipment and prep areas. Maintain temperature logs as well as other kitchen maintenance logs /food safety standards.

Team Development:

Provide operational leadership and training in the creation and production of superior food products and designs to meet all company goals and expectations. Train kitchen staff on what our food items are, ingredients, description and allergens. Help identify future leaders within Simply Fresh Events through regular training, learning and development. Lead performance reviews for kitchen team.

Department Collaboration:

Collaborate with sales department regularly to streamline tasting process for clients and to provide support on custom menu development. Work with Executive chef to meet basic metrics in regards to food costs and labor costs in relation to food revenue. Partner with Executive Chef to drive innovation through menu development.

Essential Qualifications and Experience: The requirements listed below are representative of the knowledge, skill, and/or ability required.

Experience:

Minimum three years of experience working in a commercial kitchen as a cook/chef.
Minimum two years of leadership experience managing a diverse team.
Off-premise catering experience preferred.
Experience with budgeting, cost control and vendor management.
College degree in hospitality or culinary arts preferred.

Ability to display professionalism and composure under difficult circumstances.
Skilled at managing a large pool of off-premise culinary staff.
Ability to read, write and speak English proficiently. Bilingual skills preferred.
