Overview

The Lead Kitchen Manager / Head Chef is responsible for leading all back-of-house operations at El Tiempo Cantina Galveston. This role requires 10 plus years of kitchen experience with at least 3 years of kitchen management. The Lead Kitchen Manager oversees daily kitchen operations, food quality, production, sanitation, staffing, and team development while ensuring an exceptional dining experience for every guest. The Lead Kitchen Manager works closely with restaurant leadership to maintain operational excellence, drive consistency, and foster a positive, high-performing kitchen culture.

Primary Duties & Responsibilities

Lead and supervise all back-of-house operations during daily service.
Coach, train, and develop Kitchen Managers, Grill Cooks, and Cooks.
Ensure all food is prepared according to company recipes, quality standards, and presentation specifications.
Maintain efficient kitchen operations during high-volume lunch and dinner service.
Oversee food production, prep schedules, and line readiness.
Monitor food quality, consistency, portion control, and ticket times.
Maintain compliance with all health department regulations, food safety standards, and sanitation procedures.
Assist with inventory management, ordering, receiving, and product rotation.
Control food waste and support food cost goals.
Develop employee schedules and ensure proper staffing levels.
Conduct performance coaching and assist with hiring, onboarding, and training new team members.
Maintain kitchen equipment and communicate maintenance needs promptly.
Foster a culture of accountability, teamwork, professionalism, and continuous improvement.
Work collaboratively with the General Manager and front-of-house leadership to ensure smooth restaurant operations.
Lead by example by maintaining a strong work ethic, positive attitude, and commitment to excellence.

Qualifications & Skills

Previous kitchen management or chef leadership experience in a high-volume restaurant preferred.
Strong leadership, coaching, and team-building skills.
Thorough knowledge of food safety, sanitation, and health department regulations.
Ability to manage multiple priorities in a fast-paced environment.
Strong organizational, communication, and problem-solving skills.
Experience with inventory management, ordering, scheduling, and labor control preferred.
Commitment to producing consistent, high-quality food.
Ability to train and motivate kitchen staff while maintaining accountability.
Dependable with excellent attendance and professionalism.
Ability to stand for extended periods and lift up to 50 pounds.
Flexible availability, including mornings, evenings, weekends, and holidays.
