Full Job Description

Job Overview

We are seeking an experienced sous chef for an established, busy, fun restaurant in Midtown Kingston, NY. Eliza's menu is focused on simple, well-prepared, high quality ingredients with influences from around the world. A centerpiece of our program is a live-fire grill used to showcase the beauty of the ingredients we use. We are a supportive team that strives to not only put out beautiful food, but also preserve quality of life for our employees. Our emphasis is on professionalism, finding balance, taking care of each other, and creating jobs with longevity and security.

Duties

Collaborate with executive chef to maintain all kitchen operations including ordering, scheduling, costing, sanitation practices and menu development.
Collaborate with executive chef to devise special dishes and develop recipes for: daily and seasonal specials, special events and holiday menus.
Establish and enforce sanitation standards in accordance with the standards of the Ulster County Department of Health.
Collaborate with executive chef to oversee the day-to-day operation and activities of the Eliza BOH staff.
Enforce, conduct, and promote ongoing staff trainings for the department including, but not limited to: food preparation training, sanitation best practices and safety training.
Maintain high standards of food quality, service, and cleanliness.
Maintain professional relationships with vendors.
Available to work a flexible schedule based on business demands and staffing needs.
Participate in hiring, training, and development of kitchen department staff.
Attend department meetings when required to keep all departments informed.
Read, understand, and adhere to all present and future policies, rules, and procedures.
Maintain all kitchen equipment is in excellent working condition. Coordinate all repairs necessary with executive chef, general manager and maintenance head.
Interact with guests of Eliza in a professional manner.
Ensure safe conditions. Correct any unsafe conditions immediately and ensure reporting of unsafe conditions to the executive chef and general manager.

Requirements

Previous experience as a line cook or sous chef in a restaurant or catering environment is preferred.
Knowledge of food safety standards and proper food handling techniques is essential.
Proficiency with knives and other kitchen equipment is required.
Ability to work effectively in a fast-paced environment while maintaining attention to detail.
Strong teamwork skills with the ability to communicate effectively with fellow staff members.
A passion for cooking and creating exceptional dining experiences for guests.
Flexibility to work various shifts, including evenings, weekends, and holidays as needed.
To perform this job successfully basic computer skills are needed. Have the ability to operate heavy duty industrial Kitchen equipment.
