Tortilla MakerOverview

Mero Mero Tex-Mex is seeking a dependable and detail-oriented Tortilla Maker to join our culinary team. This position is responsible for preparing fresh, high-quality corn and flour tortillas that meet our standards for consistency, texture, and flavor. The Tortilla Maker plays a key role in maintaining an uninterrupted supply of fresh tortillas before and throughout service.

The ideal candidate takes pride in consistency, follows recipes precisely, maintains a clean work environment, and works closely under the direction of the Chef to ensure quality standards are met every day.

Responsibilities

Prepare and maintain masa according to established recipes and quality standards.
Monitor and adjust masa consistency throughout the day based on temperature, humidity, and production needs.
Produce fresh tortillas before service and continue tortilla production throughout service to ensure product availability.
Press, cook, and package tortillas according to company standards.
Maintain consistent size, thickness, texture, and appearance of all tortillas.
Follow recipes and production procedures accurately.
Work under the direction of the Chef to maintain consistency, quality, and efficiency.
Monitor inventory of tortilla ingredients and notify management when supplies are running low.
Maintain cleanliness and organization of the tortilla station, equipment, and work area.
Follow all food safety, sanitation, and health department guidelines.
Assist with other kitchen duties as assigned.

Qualifications

Previous experience in a restaurant, bakery, tortilla production, or commercial kitchen preferred.
Experience working with masa or dough is preferred.
Strong attention to detail and consistency.
Ability to work efficiently in a fast-paced kitchen environment.
Ability to stand for extended periods and lift up to 50 lbs.
Reliable attendance and punctuality.
Ability to work weekends, holidays, and flexible shifts.
Food Handler Certification is preferred (or ability to obtain).

Responsabilidades

Elaborar tortillas frescas antes del inicio del servicio y continuar la producción durante el servicio para asegurar un suministro constante.
Prensar, cocinar y almacenar las tortillas de acuerdo con los estándares del restaurante.
Mantener el tamaño, grosor, textura y apariencia consistentes en todas las tortillas.
Seguir las recetas y procedimientos de producción con precisión.

Requisitos

Capacidad para trabajar en un ambiente de cocina de ritmo rápido.
Capacidad para permanecer de pie durante largos períodos y levantar hasta 50 libras.
Puntualidad y asistencia confiable.
Disponibilidad para trabajar fines de semana, días festivos y horarios flexibles.
Certificación de Manipulación de Alimentos (Food Handler) preferida o disposición para obtenerla.

Pay: $20.00 - $30.00 per hour
