The Foundation is headquartered near Chicago, on 1,250 acres in Dundee, Illinois — a verdant landscape encompassing dozens of lakes and ponds, wetlands, prairies, and mature woodlands, as well as abundant native flora and fauna. McGraw is a hospitality destination, known for its commitment to excellence in wildlife management, outdoor recreation, and culinary experiences. Position Summary:

We are seeking a skilled and passionate Full Time, Non-Exempt, Sous Chef to join our culinary team. The ideal candidate will have experience in high-quality food preparation, a strong work ethic, and a commitment to providing an exceptional dining experience for our members and guests. This position offers the opportunity to work in a dynamic and one-of-a-kind environment, utilizing fresh, local ingredients to create outstanding dishes while supporting our mission of conservation, natural resource management, and responsible land use.

Key Responsibilities:

Prepare and cook menu items in accordance with established recipes and standards.
Ensure the highest quality food presentation and consistency.
Maintain a clean, organized, and sanitary work environment, adhering to all food safety regulations.
Assist with receiving and stocking kitchen inventory.
Collaborate with the culinary team to execute menus that align with our high standards.
Follow proper food handling procedures and kitchen safety protocols.
Support kitchen operations as needed, including prep work and dish plating.
Work efficiently in a fast-paced kitchen while maintaining attention to detail.

Qualifications:

Previous experience as a Sous Chef or similar role in a professional kitchen.
Knowledge of culinary techniques and food preparation methods.
Ability to work flexible hours, including evenings, weekends, and holidays as needed.
Strong organizational and multitasking skills.
Excellent teamwork and communication skills.
Ability to stand for extended periods and lift up to 50 lbs.
Passion for food, sustainability, and quality ingredients.
