Full Job Description

Ru San's Japanese Restaurant – Buckhead, Atlanta, GA
Salary: $72,000 per year + Performance Bonus

Ru San's is rebuilding and elevating our kitchen. We are looking for a hands-on Kitchen Manager who is also an experienced sushi chef capable of leading both our hot kitchen and sushi bar.

This is not a position for someone who simply works the line. We need a leader who can build systems, train people, improve quality, and help take the restaurant to the next level.

Responsibilities

Manage all kitchen and sushi bar operations
Prepare and cut premium fresh fish to the highest standards
Train, mentor, and develop sushi chefs and kitchen staff
Ensure consistency, quality, and presentation of every dish
Create unique sushi rolls, appetizers, entrées, and seasonal Tokyo Nights specials
Develop profitable menu features and limited-time offerings
Build and maintain recipes, PAR levels, prep sheets, inventory systems, and ordering procedures
Control food cost, waste, and labor while maintaining high quality
Schedule kitchen staff to meet labor goals
Maintain vendor relationships and inventory levels
Ensure cleanliness, organization, and health department compliance
Lead by example during busy services
Work directly with management to achieve sales, food cost, labor, and profitability goals
Help reshape and modernize our kitchen while preserving the quality Ru San's has been known for over 30 years

Qualifications

5+ years of sushi chef experience
Previous kitchen management or executive chef experience
Expert knife skills and fresh fish fabrication
Experience creating original menu items and seasonal specials
Strong leadership and staff training experience
Knowledge of inventory management, food costing, scheduling, and labor management
Ability to thrive in a fast-paced, high-volume restaurant
Strong organizational and communication skills
Passion for Japanese cuisine and continuous improvement

$72,000 annual salary
