Full Job Description

Café Monarch is a nationally recognized fine-dining restaurant in Old Town Scottsdale, known for elevated cuisine, refined hospitality, and an uncompromising commitment to excellence.

We are seeking an experienced, organized, and highly motivated AM Sous Chef to join our culinary team and help ensure the kitchen is fully prepared for each evening’s service.

Position Summary

The AM Sous Chef reports directly to the Executive Sous Chef and works alongside him to execute the kitchen’s daily preparation and production needs.

This is a hands-on position responsible for helping complete the day’s prep work accurately, efficiently, and according to Café Monarch’s standards. The AM Sous Chef will assist with organizing production, preparing ingredients and menu components, monitoring quality, and ensuring every station has the mise en place needed for a successful dinner service.

The right candidate is a highly skilled cook who is organized, dependable, efficient, and committed to precision and consistency.

Responsibilities

Work directly with the Executive Sous Chef to execute all daily prep and production.
Prepare ingredients, sauces, stocks, proteins, garnishes, and other menu components according to established recipes and specifications.
Help organize and prioritize the daily prep list based on service needs.
Ensure all products are prepared accurately, consistently, and on schedule.
Monitor the quality, freshness, portioning, and presentation of prepared items.
Assist with guiding prep cooks and maintaining an efficient production flow.
Ensure each station is properly stocked and prepared for dinner service.
Identify and communicate shortages, product concerns, or incomplete prep.
Assist with receiving, storage, labeling, dating, and product rotation.
Maintain a clean, organized, and sanitary production environment.
Follow all food-safety, sanitation, and workplace-safety standards.
Minimize waste through careful preparation, handling, and portioning.
Assist with inventory and ordering responsibilities as directed.
Support additional kitchen production needs when necessary.
Contribute to a professional, disciplined, and collaborative kitchen culture.

Qualifications

Previous experience as a Sous Chef, Lead Prep Cook, Chef de Partie, or experienced culinary professional in a fine-dining or high-level scratch kitchen is preferred.
Strong cooking fundamentals and knowledge of professional kitchen production.
Ability to execute recipes and preparation standards precisely.
Excellent organization, time management, and attention to detail.
Ability to work independently and collaboratively.
Strong communication skills and professional demeanor.
Ability to manage multiple preparation priorities efficiently.
Reliable attendance, punctuality, and a strong work ethic.
Ability to stand for extended periods and lift up to 50 pounds.
Food-handler certification required or the ability to obtain certification.
