We are seeking a compassionate, organized, and experienced Director of Dining Services to lead the daily operations of our Dietary Department. This role is responsible for ensuring residents receive high-quality nutritional services while maintaining compliance with all federal, state, and local regulations. The ideal candidate is a collaborative leader who is passionate about resident satisfaction, food quality, team development, and operational excellence.
Position Summary
The Director of Dining Services oversees the day-to-day operations of the Dietary Department, working closely with the Registered Dietitian, nursing staff, leadership team, residents, and families. This individual ensures the delivery of safe, nutritious, and appealing meals while fostering a culture of teamwork, accountability, and exceptional customer service.
Key Responsibilities
Dietary Operations
- Assist the Dietitian in planning, organizing, and directing the overall operation of the Dietary Department.
- Ensure compliance with all federal, state, and local regulations related to food service operations.
- Maintain a clean, safe, and sanitary food service environment.
- Oversee meal preparation and service to ensure quality, appearance, temperature, and timeliness standards are met.
- Ensure foods are prepared according to production schedules, menus, and standardized recipes.
- Manage therapeutic diets, substitutions, nourishments, and supplemental feedings.
- Ensure proper food receiving, storage, preparation, service, and transportation practices.
- Monitor and maintain sanitation, infection control, and food safety standards.
Administrative Leadership
- Assist in developing, implementing, and evaluating departmental programs, policies, and procedures.
- Complete required reports, audits, studies, and documentation.
- Participate in menu planning, resident satisfaction initiatives, and food service improvements.
- Monitor departmental budgets and expenses to promote cost-effective operations.
- Utilize inventory records, food waste tracking, forecasts, and equipment records to manage purchasing decisions.
- Maintain accurate records of expenditures and prepare reports as requested.
Team Leadership & Staff Development
- Assist with recruitment, interviewing, hiring, onboarding, and retention of dietary staff.
- Ensure staff are properly trained and maintain required competencies.
- Develop and maintain job descriptions and performance evaluations.
- Schedule adequate staffing to meet departmental needs.
- Coach, mentor, and support team members to achieve departmental goals.
- Conduct performance evaluations and address performance concerns when necessary.
Communication & Collaboration
- Maintain effective communication with residents, families, nursing staff, department leaders, and external partners.
- Participate in interdisciplinary team collaboration regarding resident dietary needs.
- Process diet changes and physician-ordered nutritional modifications.
- Support facility events, meetings, and special functions requiring dietary services.
- Assist in survey preparation and corrective action planning when needed.
Resident Experience
- Deliver exceptional customer service to residents and their families.
- Respond to resident concerns and preferences promptly and professionally.
- Foster a dining experience that enhances quality of life and resident satisfaction.
Qualifications
Required
- Certified Dietary Manager (CDM) certification required and must be maintained in good standing.
- Minimum of 2 years of experience in dietary management, food service management, or food and nutrition services leadership, preferably in a long-term care, skilled nursing, assisted living, or senior care setting.
- Knowledge of food safety, sanitation regulations, and therapeutic diet requirements.
- Strong leadership, organizational, and problem-solving skills.
- Excellent verbal and written communication skills.
- Proficiency with Microsoft Office, including Word and Excel.
- Ability to work collaboratively with a diverse group of residents, families, and team members.
- Must meet all health, background, and employment requirements applicable to the position.
Preferred
- Long-term care or skilled nursing experience.
- Experience managing food service budgets and staff scheduling.
- Experience working alongside a Registered Dietitian.

- Ability to respond to emergency situations, including assisting with resident evacuation when necessary.
- Must meet the physical and health requirements established by the facility.
