We invite you to share your inspiring leadership and professionalism at the highest level all while learning new skills. The role of the Executive Chef is to oversee, supervise, and coordinate food production and execution for culinary operations at Paws Up Montana.
Supervise culinary team members of multiple culinary outlets to ensure that methods of cooking, garnishing, and portion sizes are as prescribed by recipes and adhered to consistently.
Exhibit culinary talents by personally performing tasks while leading the team members and managing all food-related functions.
Identify and communicate production needs to culinary team members.
Meet daily with culinary managers to coordinate and ensure production standards, determine specials, employee meals, review outlet/event personnel needs and issues, etc.
Conduct daily shift meetings with the culinary team.
Understand and follow the food allergy procedure and special orders/restrictions.
Estimate daily production needs on a weekly basis and communicate production needs to culinary team members.
Assist in the development of menus and food items.
Work to continually improve guest dining satisfaction while maintaining the operating budget.
Improve service by communicating and assisting to understand guest needs, providing guidance, feedback, and individual coaching when needed.
Provide day-to-day guidance and oversight of culinary and service team members; actively promote, train, coach, and recognize performance.
Interview, hire, train, and develop culinary team members.
Identify, address, and document individual employee performance problems according to standard operating procedures.
Perform a daily “walk through” of inventory to prioritize product utilization.
Supervise and participate in the purchase and order of all food products and supplies.
Manage culinary operations and ensure compliance with all Food & Beverage policies, sanitation, food standards, and procedures.
Actively engage guests in the dining rooms. Gather feedback, speak to the program, and provide a face to associate with the food programs for guests and build relationships for future stays.
Maintain strong written and verbal organizational skills.
Display Paws Up Montana’s values and standards at all times.
Always demonstrate professionalism and hospitality to guests and team members.
Handle guest transactions legally, ethically, and confidentially.
Maintain a favorable working relationship with all team members to foster and promote a positive working environment.
Always maintain a clean and neat appearance.
Perform work in a safe and high-quality manner.
Education: High school diploma, GED, vocational training, or job-related coursework required. 2-Year Culinary AOS Degree or equivalent training strongly preferred.
Experience: Minimum of 6 years fine dining kitchen experience, including at least 3 years in a management/leadership position.
Skills & Knowledge: Knowledge of world-class hospitality and service; basic proficiency in Microsoft Word, Excel, and Outlook.
Licensure & Certifications: Valid Food Handler’s License and valid State Driver’s License with at least two years of driving experience.
Background Clearance: Must pass a background check with a clean driving record for the previous 5 years.
Ability to stand, walk, reach, bend, and lift for extended periods during shift operations.
Ability to work in varying kitchen conditions, including exposure to high heat, cold environments, and high-volume operations.
Ability to safely lift and carry kitchen equipment, supplies, and food items up to 50 lbs.
