Job Overview

We are seeking a dynamic and passionate Sous Chef to join our vibrant culinary team for Upscale restaurant with a reputation for high quality island cuisine featuring local fish in the island of Kauai . In this role, you will be instrumental in executing high-quality food preparation and presentation, ensuring exceptional dining experiences for our guests. As a key leader in the kitchen, you will oversee daily operations, supervise kitchen staff, and uphold the highest standards of food safety and sanitation. This position offers an exciting opportunity to showcase your culinary expertise, leadership skills, and commitment to excellence in a fast-paced, fine dining environment.

Duties

Assist in supervising daily kitchen operations, including food preparation, cooking, and plating to meet quality standards.
Lead and manage kitchen staff during shifts, ensuring efficient workflow and adherence to safety protocols.
Oversee food safety sanitizing procedures and ensure compliance with all health regulations.
Coordinate menu planning and food production for various service types such as fine dining, banquets, and catering events.
Manage inventory control and food handling processes to minimize waste and optimize costs.
Support dietary department needs by preparing specialized meals and accommodating dietary restrictions.
Maintain a clean, organized kitchen environment while supervising food service management activities.
Assist with training team members on food safety procedures, cooking techniques, and customer service standards.
Collaborate with management on cost control initiatives and inventory management strategies.
Ensure seamless shift management by overseeing staffing levels, scheduling, and operational flow.

Experience

Proven experience in a supervisory role within a fast-paced culinary environment, preferably with banquet or catering experience.
Extensive culinary experience with a strong background in food production, fine dining cuisine, and restaurant management.
Demonstrated leadership skills in managing teams of cooks and kitchen staff effectively.
Knowledge of food safety sanitizing procedures, inventory management, and cost control practices.
Experience working in hospitality settings such as restaurants or catering services with a focus on serving high-quality meals.
Familiarity with menu planning, food handling regulations, and kitchen management systems.
Strong background in managing shifts efficiently while maintaining excellent customer service standards.
